Annie's Fruit Salsa and Cinnamon Chips

Really disappointed with this... As written, the recipe has way too much apple and not enough kiwi. Apple was all you could see or taste and the kiwi disappeared to nothing. Thought 3 T of fruit perserves was way too much - would make it like a glaze - so used 2 T and was still WAY too much. Plus the sugar made all the fruit release their juice so it was just mushy fruit slop - didn't hold the diced shape at all. Am so disappointed I haven't even bothered to make the cinnamon chips cuz the salsa doesn't look appetizing enough to scoop up :(

General Tsao's Chicken

Decreased cornstarch to 1/4 c, decreased sugar to 1/2 c, added slightly less than 1/4 c of vinegar. Dipped chicken in egg and soy, then shook in bag with 1/2 c cornstarch and 1/2 c flour (got rid of a lot of the overall starchy taste). Added thin, diagonally sliced carrots to veg, added water/cornstarch to thicken sauce and water to thin. Poured sauce over chicken just before serving. Awesome with revisions.

Shrimp Scampi V

Halved the recipe for the bf and I. Added about a tsp of olive oil to the butter, incresed the butter to 1/3 c, added chopped cherry tomatoes, used 3 cloves garlic and 1/2 c wine. Also added lemon juice, fresh oregano, basil and chive, and red pepper flakes. Classic.

Chicken Pot Pie IX

In addition to directions: Boil chicken in broth. Use pillsbury ready-made pie crusts, cut to fit 6 individual pies. Brush bottom crusts w/ egg white & prebake for 6-7 min. Add poultry seasoning and garlic powder to roux. Mix roux in with chicken & veggie mixture.

Buzzsaw's BBQ Sauce

I made this to top off my pulled pork sandwiches with - I only added one tbsp. of cider vinegar and doubled the garlic, other than that I followed the recipe exacty - and it was AWESOME!!! Will definitely use again in the future. :)

Summer Chicken Burgers

This was pretty good - I followed the suggestions and marinated my chicken breasts in a balsamic vinegar/olive oil/herb bath after pounding them, and mashed the avocado with the lemon juice and a bit of mayo to make a spread. I found the avocado spread way too slippery - it made the burger hard to eat - and the burger overall was okay but felt like it was missing something. It was sort of blah. Next time I'll add bacon, which I think is sort of cheating because you can add bacon to pretty much any meat dish and people will automatically like it more, but maybe it's what this burger was missing. It was just too much messy blah-ness on its own... This would make killer mini burgers though.
