Layered Mint Chocolate Fudge

This was easy to make and turned out very good! I made it in a 9x5 inch loaf pan. I did one batch of green and one batch of red. Special thanks to Keri for helping me out with this on the recipe exchange. I'm giving these as Christmas gifts.

Crunchy Peanut Butter Balls

These taste delicious and look great, however I did not find them to be quick like the recipe states. I made two batches and each ended up taking about an hour from start to finish. I used 2.5 cups of rice krispys per batch and found that if you freeze the balls before dipping they stay together better. I stuck a tooth pick in each ball before freezing and used that to roll it around in the chocolate. Also, I would suggest not melting the chocolate all at once because by the time you get to the bottom of the bowl, the chocolate has hardened and is not easy to work with. This is easily fixed by melting half of the chocolate first and the other half later. These are one of the goodies that I am putting in christmas baskets that I am giving as gifts. Caramel Shortbread Squares

Make sure that the bowl you melt the chocolate in is COMPLETELY DRY. There was a drop of water in mine and the chocolate turned into a grainy ball that I had to throw away. It worked great the second time though. I doubled the recipe and used a 9x13 baking dish lined with foil as suggested. I scored the bars after the chocolate hardened a bit, then wrapped in plastic and foil to freeze. When I took it out, I cut the bars and put them in little miffin cups, wrapped them up, and they were a part of my chirstmas baskets. Luckily there were leftovers because these taste sooo good.

Apple Strudel Muffins

These taste like apple pie warm out of the oven. At first I thought that the ecipe lacked liquid because there was no milk, but the batter was pleanty moist. Thanks!

Nauvoo Gingerbread Cookies

These took a while to make, but the end result was worth it. My only complaint is that they could be softer. I used shortening instead of lard. I will be using these in Christmas baskets as gifts.

Monkey Bread I

I scaled the recipe down to use one package of biscuits and serve 5. I baked it in a loaf pan and it worked very well. I prefer monkey bread over cinnamon rolls because it takes a lot less time to make. Thanks for the recipe!

To Die For Blueberry Muffins

These were easy to make and they taste delicious! I doubled the recipe and used frozen blueberries. I used brown sugar instead of white for the topping. Next time I won't double the topping because there was a lot leftover. I froze the leftover topping. Doubling the recipe gave me 14 large muffins. Thanks for this delicious recipe. I look forward to trying it with different fruits like bananas and apples.

Baked Ziti I

This was very good. I used a pound of ricotta, left out the provolone and sour cream. I also had to use rotini because there was no ziti at the store. I served this to conpany with french baguettes and green beans. Tastes similar to lasagna, and we have a lot of leftovers! I will try this again with spicy sausage. Thanks!

Italian Sausage Soup

This is the best soup I have ever had! It was really easy to make, too. I added a potato. I put the zucchini in with the other vegetables and then let it simmer as directed. Instead of the cans of beef broth, I just used 4 cups of water and 4 beef boulion squares. After 15 minutes, I added the beans and spinnach and covered for 5 minutes. Adding the zucchini early and skipping the additional 15 minute simmer did not make a difference in the soups taste. I will definetly be making this many times this winter! Thankyou!

Beef Taco Skillet

This is a yummy, qick dinner. I used 1 cup cheese and added 1/2 to the skillet with the other ingredients and sprinkled the other 1/2 on top when it was done. I also sed milk instead of water.

Extra Easy Hummus

This was the first time I have had hummus. It is soo good! I doubled the garlic and used sesame oil instead of olive. It's a delicious dip for raw carrots, cucumber, and green pepper. I will definetly be making this again! Thanks!

Cottage Cheese Chicken Enchiladas

Five Stars for being pretty easy to make, healthy, and delicious. I used the red enchilada sauce recipe from this site. These can be made with whole wheat wraps and low fat cottage cheese and sour cream. It filled three very large tortillas. I would make these again. Thanks.

Easy Slow Cooker French Dip

I served these on homeade french rolls with mashed potatos and a salad. Everyone seemed to like them. I used a sirloin tip roast. I had to use light beer because it was all we had. Next time I will try it with regular.

French Bread Rolls to Die For

I used my bread machine to make the dough. These were not as good as I expected. I will brush the tops of the rolls with something next time, because they didn't look very good. At least they tasted pretty good. Also, it makes about 8 regular sized sandwich rolls (I served Easy Slow Cooker French Dips on these). I thought that it would make more since the recipe says that it serves 16.
