Ranch Ham Roll-Ups

These were quick and easy. I kept them in the fridge for quick snacks and packed them for lunches. A nice change from PB&Js.

Black Bean Brownies

The texture of these really threw me off. They were dry and cracking on top, but the insides were still moist. I think there may have been too many eggs. However, I didn't taste the beans. They taste better with some icecream. UPDATE: These are a lot better the next day. They get 4 stars now :-)

Peppy's Pita Bread

This was the first time that I have attempted pita bread. I will be making it like this from now on instead of buying it, since it is over priced and this way is so easy! Thanks for the recipe! Note- If you mcrowave a pita for about 30-40 seconds it will fold in half without tearing.

Absolutely the Best Chocolate Chip Cookies

Yumm. I put about 2 T of butter with the shortening because mine was not butter flavored. Mak sure that you take them out of the oven before they look done so that they stay nice and soft. Great recipe!

Sweet Corn Cake

I've been looking for a recipe like Chevys for a long time, and this is it. I couldn't find masa harina so I used 1/3 c flour and 1 T cornmeal like someone suggested. Cut back butter to 1/4 c and it was great. I will definetly make this again. Thanks so much!

Delicious Black Bean Burritos

I doubled the recipe and used 8 oz fat free cream cheese. Tomatoes would be good next time. I will also add some salsa for extra flavor, as they were a little bland. I also used whole wheat tortillas, and this recipe definetly serves more than 2, the doubled batch probably seres about 6 on taco size tortillas. Thanks for the recipe!

New York Cheesecake III

This was my first cheese cake and it turned out very good. I like that there was no water bath required. It lasted a long time in my fridge, too (about a week and a half) You can also freeze leftovers and it tastes great frozen.

Oatmeal Chocolate Chip Muffins

I must not have been paying close attention to the recipe when I made these, because I mixed all of the brown sugar and nuts into the batter and left none for topping. I also forgot to put an egg in. So my muffins were eggless and had no topping, but they still tasted very good. The oatmeal makes them a hearty, filling, breakfast.

Overnight Coffee Cake

I love that you o not need to change naything about this recipe and that it can be prepared the night before. It's moist and delicious. To make your own buttermilk, simply put a half tablespoon of white vinegar or lemon juice in a measuring cup, fill it up to the 1/2 c line with milk, and let it sit for 5 minutes. My cake was done 10 minutes early, so keep an eye on it. Thanks!

Turkey Brine

This produced a very juicy bird. I used apple juice for half of the broth. It almost tasted like the bird was pickled or something. Someone also said that it had a slightly different texture, more rubbery. I didn't notice this and thought that the meat was very tender ad juicy.

Awesome Sausage, Apple and Cranberry Stuffing

I was a little but dissapointed by this, just because the reviews were so good, maybe I was expecting too much. Don't get me wrong, this was very good, just not THAT much better than our regular stuffing.

Gourmet Sweet Potato Classic

This is very good. I followed the recipe to a T. The only suggestion that I have is to make sure that your potatoes are done. I used 4 very large potatoes and the baking time that the recipe stated was not nearly long enough. I ended up finishing them up in the microwave so that they were soft enough to mash, which I did with an electric mixer. Thanks, this was a great addition to our Christmas dinner.

Pepperoni Bread

Yum! This was quick and easy. I used turkey pepperoni and Pillsbury french loaf like others suggested. We dipped it in tomato sauce and it was just like having pizza. Will definetly make this again, thanks!

White Chocolate Covered Pretzels

I used white almond bark and pretzel rods for this recipe. I drizzled milk chocolate over the pretzels. The only problem was that some of the milk chocolate didn't stay on the pretzels. I put them in mugs and wrapped them up. This makes a lovely Christmas gift.
