To Die For Blueberry Muffins

They ARE to die for! I made 1 and a half times the recipe and got 12 big muffins in a standard tray, filled to the top. I used 2 cups frozen blueberries (couldn't tell the difference) and added cinnamon to the batter because I skiped the topping. Also I made buttermilk by adding 1/2 tsp of vinegar to the milk. 5 Stars!!

Vanilla Crepes

I have been using this recipe for a few years now... my kids ask for 'skinny pancakes' EVERY Saturday! TIPS...I use a regular frying pan and keep them warm in the oven until I accumulate a pile. The only changes I make are: Use 2 whole eggs instead of just 3 yolks, Add an additional 1/2 C. of milk to thin out the batter. This helps when you swirl the batter around the pan to get a nice thin crepe. Other than that, Perfect!! I don't even have to grease the pan. I had never made crepes before trying this recipe, but now I feel like a pro!! Thanks for the recipe, it is now a tradition in our house too :) For an easy topping simmer blueberries and strawberries in some pancake syrup & a bit of water. Mash them up a bit and you have a delicious 2-berry syrup. I have always wanted to try these crepes as a dessert topped with ice cream and berry sauce!

Butter Tarts

This is the best butter tart recipe ever!! We like our butter tarts plain so I don't add any nuts or raisins, just a little vanilla. I make the shells from scratch and this recipe makes 12 big (muffin pan sized) butter tarts without nuts/raisins. YUM!

Curried Butternut Squash and Pear Soup

I loved this soup! I made the broth from last night's chicken dinner and used apples instead of pears (that is what I had on hand). The flavour of the soup was delicious, but I think I had more than 4 cups of broth so to add a bit of richness I mixed in 1/4 pkg of melted cream cheese. It's sitting in the crock pot right now and the aroma is throughout the whole house! I will definately make this again!

Original Nestle® Toll House® Chocolate Chip Cookies

Great recipe! I used all margarine in my cookies and they were perfect... not too crispy or flat. I didn't have any nuts but I added in some Smarties (my kid's favourite!) Simple and tasty!

Rempel Family Meatloaf

Delicious!! I followed the recipe as written except I substituted the ketchup/steak sauce with BBQ sauce. VERY TASTY!! I also pressed some brown sugar into the bottom of the pan with a squirt more of BBQ. When it was done, I flipped it over and had a wonderful glaze!!

Coconut Pineapple Chicken

I love the combination of coconut and pineapple so I gave this recipe a try. I used coconut milk and added a splash of flavoured rum. I cooked it in the crock-pot on low for 5 hours. I thought it needed a little something so I added curry paste and sliced onion. Tasted just like chicken coconut curry (one of my favourites!!) I served it with Basmati rice. Only one thing wrong...my sauce curdled. Maybe I added too much lemon (?) Anyway it tasted great with the addition of curry!

Homesteader Cornbread

Delicious!! After reading other reviews I made the following changes: switched the cormeal/ flour amounts, let cornmeal soak 10 minutes, added a full cup of sugar, beat 5 minutes. I also drizzled a little honey on top before baking. It had lots of flavor and was light and moist. I'm going to bring it to a potluck BBQ and see what everyone else thinks!

Lobster Bisque

Great recipe! So easy... I added a little extra flour and a dash of paprika and garlic. It had great flavor! I also added a few chives for a little green color and let it simmer for about half an hour. Delicious!

Tea Biscuits

Great recipe! I made 8 large tea biscuits and used half margarine and half shortening. I also added in some grated cheese... ummmm! I found it easier to roll and flatten balls of dough with my hands and I made the second batch thicker than 1/2 an inch because mine didn't rise much.

Buttery Soft Pretzels

These are delicious! Be careful... they won't last long! After reading other reviews I only used 3 teaspoons of yeast and dropped the prezels into a pot of simmering baking soda solution before baking. They come out perfect every time. We make them often and brush them with garlic butter or parmesian cheese for a different taste.

Yummy Sweet Potato Casserole

Soooo delicious! Great as a dessert or snack with tea as it is quite sweet. My husband says it reminds him of pumpkin pie without the crust :)

Best pizza dough recipe ever!! I follow the recipe exactly and bake it on a pizza stone. I have tried many other recipes and this one always works. It's a keeper!
