Aunt Norma's Rhubarb Muffins
I was nervous when my batter was thick (like peanut butter), however these turned out great! I doubled the recipe and got 24 reg. muffins and 24 minis. Changes (recipe doubled) 1tsp extra baking powder, 1 c extra rhubarb, omitted crumb topping. I didn't have buttermilk so I used the vinegar/milk substitute. I stirred it all by hand. They were fluffy and delicious, even without extra butter! Another tasty & easy muffin recipe :)

Billy's Favorite Gingerbread Spiced Coffee Syrup
Amazing gingerbread flavour! I added 1 tsp of molasses to my mixture and it tasted just like old fashioned gingerbread. I did substitute ground cinnamon and crystalized ginger for the ginger root and sticks, as I didn't have any on hand. Much better than the artificially flavoured stuff!

To Die For Blueberry Muffins
They ARE to die for! I made 1 and a half times the recipe and got 12 big muffins in a standard tray, filled to the top. I used 2 cups frozen blueberries (couldn't tell the difference) and added cinnamon to the batter because I skiped the topping. Also I made buttermilk by adding 1/2 tsp of vinegar to the milk. 5 Stars!!
