Blueberry Pie

Reviewed: Jul. 11, 2010
This was very good. I got lots of compliments. I used 2 pts fresh blueberries (which meaured out 4 cups). I did use 4 Tbs cornstarch. Next time I think I will use 5 Tbs. My pie was very runny. It was tart, for a sweeter pie use 1 cup sugar. I used a pisbury roll out crust. YUM!

Buffalo Chicken Burgers with Blue Cheese Dressing

Reviewed: Jun. 28, 2010
This was really good. Only had 1 lb of meat so I scaled to 3 servings. I brushed it with 1/4 cup Lawry's Buffalo BBQ marinade mixed with 2 TBS Franks hot sauce. Left out the celery salt b/c I didn't have it. These were great. Didn't make the dressing either. Served on a twist roll with red onion and tomato.

Kabob Marinade

Reviewed: Jun. 6, 2010
This was excellent. The only changes I made was I cut the oil in half (1/2 cup) and used olive oil. I added 1/2 cup water since I cut some liquid. I also used some garlic powder and 4 frozen garlic cloves. For the mustard I used dijion. It was all I had. I marinaded over night. Everyone loved it! I put mushrooms and onions marinaded for 15 minutes with a little oil, garlic powder, salt and pepper on the sticks. YUM!

Mushroom-Stuffed Tenderloin

Reviewed: Apr. 19, 2010
This was excellent. I marinaded the meat in wochestershire sauce, salt, pepper, onion powder and garlic powder. I used sirlion cut in strips instead of tenderloin. I used precooked bacon (4 strips) and used some beef broth as liquid to cut calories. I only used 1/2 cup bread crumbs and skipped the cheese. I used dried parsley (a little less than a tbs). I used 1 Tbs minced garlic and 2 Tbs minced onion. After cooking the mushroom mixture, I chopped it in a hand chopper, and did the same for the bacon. I added the beef broth as needed, just to make the stuffing moist. I split in 3 parts and spread on sirlions, then I rolled them up. I cooked for 10 minutes uncovered and then 15 minutes covered on convection at 350. It came out perfect. I cut some ingredients to make it healthier. This was a great meal!

Basic Cream Cheese Frosting

Reviewed: Mar. 14, 2010
This was very good frosting. I did cut the sugar to 2 1/2 cups. It was hard to use for decorating though. It was very soft. Maybe I needed more sugar, but then it might be too sweet. Would use again. :-)

Taco Seasoning I

Reviewed: Feb. 28, 2010
I used this to make shrimp quesidilias. This was an excellent seasoning. I made 5 servings but doubled the garlic and onion powder. I left out the cumin b/c I didn't have any, but I will definately add it next time. I put the rest away for another time.

Caramelized Baked Chicken

I liked this but my husband didn't. He said it was too sweet. I did add some red peppers and extra garlic. This makes a lot of sauce.

Almond Drops

Reviewed: Jan. 1, 2010
These were good. I cut the recipe in half and added 2 tsp of almond extract. I also used slivered almonds instead of sliced almonds. They would be better with a little more almond extract. Also might try dipping them half in chocolate next time. Would make again. Thank you.

I used white cake mix and 1/2 tub chocolate frosting. I froze the balls to make it easier to dip. I needed 4 7oz chocolate bars to coat. I used dark chocolate. They were a big hit!

Downeast Maine Pumpkin Bread

Reviewed: Nov. 7, 2009
This is the same recipe my cousin gave me. It is great. The only differnce is I only used 1 1/3 cup flour, 1/2 tsp salt, and no cloves or ginger. It is great. My kids loved it. My cousin also added walnuts and raisins. I baked in 4 8 inch foil bread pans. Yum! I usually don't like pumpkin bread, but I like this. I might try someone elses suggestion and use 1/2 cup applesauce and 1/2 cup oil next time to make it a little healthier.

Italian Bread Bowls

Reviewed: Nov. 5, 2009
I have made these twice now and they went flat both times. The first time I let it rise for 1 1/2 hours, the second time 1 hour. It was better the second time, but still not nice and round. I will try 35 minutes next time. I added 1 tsp of sugar as others suggested. Both times I forgot the cornmeal. I am not sure if this made a difference. They tasted good.

Cinnamon Rolls II

Reviewed: Aug. 29, 2009
These are great! They are 5 stars with minor changes. I cut the dough recipe in half b/c I have a 1-2 lb bread machine. It would have been too much for my machine. The submitter must have a larger bread machine. Second, for the filling I used 1 cup brown sugar, 2 Tbs cinnamon and 1/3 cup melted butter. I made the full amount of frosting, but added about a tsp of vanilla. I softened the butter in the microwave. After slicing them and putting them in a 9x13 glass baking dish, I put saran wrap over the dish and put it in the fridge until I was ready to bake. It rose in the fridge, so I skipped the second rise. I baked for 20 minutes, but put it in the oven as it preheated. The rolls were slightly browned and a toothpick came out clean. I then dumped them in another 9x13 dish so the sugar middle would slide back in. I iced and served hot. The leftovers went in the fridge. YUM!!! Thanks for a great recipe. I am glad I tried this one over the Clone of Cinnabon recipe after reading all the reviews. These are better than store bought!!!

Italian Bread Using a Bread Machine

Reviewed: Aug. 29, 2009
This was really good. I used 2 cups bread flour and 2 cups all purpose flour. I skipped the cornmeal. I made rolls and froze half before the second rise. These are great! Also good if you sprinkle some garlic powder on them before baking.

Cinnamon Raisin Swirl Bread

Reviewed: Aug. 22, 2009
This bread was really good. It rose a little too much for my bread machine. It hit the top. I deflated it and put some Pam oil spay on my hands so it wouldn't stick (I read the suggestion on another site, it worked and I didn't have to add more flour). I did substitute 2 Tbs canola oil for shortning and white sugar instead of brown sugar(I didn't have shortning or brown sugar). I didn't put the raisins in the dough, I rolled out the dough, put on the sugar/butter mixture and sprinkled on the raisins. I than rolled up the bread. I was out of butter and eggs, so I brushed the top with water and sprinkled on some cinnamon and sugar. I might us an egg wash next time. I froze one loaf and baked the other. Oh, mine only needed 1/2 hour to rise. I then set the oven to the temp and left the bread in for 30 minutes. It was perfect. This bread was great!!! I would definately make it again.
