Gourmet Sweet Potato Classic

So delicious! Made it gluten and dairy free without altering it much at all. Used Smart Balance instead of butter and some finely ground oats in place of the flour in the topping and Almond milk in place of the cream. The seasoning in the potatoes is perfect. I did cut back a little bit on the sugar (I used brown). I baked the potatotes until they were super soft and used a mixer to mash to eliminate the strings! SUPERB!

Banana Wake-Up Bars

I made these gluten and dairy free!! And they turned out awesome! I just ground up some oats in my food processor until they were the texture of flour. And I used Smart Balance instead of butter. And flax meal instead of wheat germ. I left the rest of the recipe the same -- except I did add more bananas (I used 3) because I needed to get rid of them. I also made them in muffin tins just so they would be smaller portions to freeze! Ok - so I did modify it alot - but still an Awesome recipe! Thanks!

Bourbon Slush

Yummy! I have made this drink several times! It always get rave reviews. We take it to the beach every year. I freeze a big batch in ziploc bags then we scoop it out as needed and pour on ginger ale (diet:) I make these a little stronger than the recipes calls for - but they are good either way! OH -- and I do little or no sugar!! It is pretty sweet already with all the juices. I will sometimes add a little (1/4 cup or so)

Buckeye Delights (Cookie Mix)

I didn't really know how to rate these because I didin't exactly follow the recipe. I made these into a really easy version on Martha Stewarts Peanut butter surprise cookies (which are delicious but time consuming). So - I made the chocolate cookie dough as stated and made the PB filling as stated. I took 2 walnut size dough balls - flattend them out then sandwiched a ball of PB in between the 2 chocolates and pinched closed. Yummy!

Banana Sour Cream Bread

Roast Sticky Chicken-Rotisserie Style

This is the best roasted chicken I have ever made. This is my new "go to " recipe. Cut back on red pepper. The whole family loved it. 5 lb chicken took about 3 1/2 hours. Next time I am making two. There weren't any leftovers!

Slow Cooker Teriyaki Pork Tenderloin

This was great! Everyone (including kids) wanted seconds! I ran out of teriyaki sauce and had to concoct my own with brown sugar, soy sauce and red wine vinegar. . .but it was still great! I didn't brown it first (didn't have time) I'm sure the color would have been much prettier if I had. I doubled the liquid part to give more juice for cooking and I used red pepper flakes (about 1/2 tsp). 4 hours on low was plenty of time for my whole pork loin (used loin cause it was cheaper than tenderloin). I added 3 cups of rice and some frozen broccoli to the slow cooker with 30 minutes left on the timer -- that was AWESOME! I'll definitely do that again.

Mock Chicken Fried Steak

These were yummy, although I must admit I didn't exactly follow the recipe. I used the chili powder but I added a packet of Ranch dressing mix. Next time I will add some onion soup mix, i just didn't have any today. Oh - and I added an extra egg. As for the cooking - i did it two ways. Fried them in canola oil for my kids and baked at 380 in the oven for about 30 minutes for me. Both ways were equally yummy. No need to add all those fat grams -- the baked were crispy and yummuy too!

Spaghetti Pie II

This was really delicious! Omitted green pepper. Added some mushrooms and a little salt and basil to the sauce. Unexpected company showed up -- rave reviews! Will Definitely make this again! Thanks!

Slow Cooker Chicken Cacciatore

This was so quick and easy and smelled wonderful all day. I used 4 frozen breasts. I added a can of tomato paste about half way through because it was a nit too runny. Turned out great. Thought it was missing something - might try to spice it up more next time. I added about 1/2 tsp. red pepper flakes - but that wasn't enough.

Brownie Chocolate Chip Cheesecake

This is some really good cheesecake! It disappeared from our firdge in about 24 hours! Scarry!! The best thing about it is how easy it is! I think the brownie crust was too thick (next time I'll use 1/2 the mix) and add some chocolate chips to the crust to make it gooey. I didn't think the chocolate chips added much to the cheesecake part. I want to add some melted caramel next time too.

Key Lime Pie VII

PERFECTION! Will make this one again and again. I'm not a key lime pie conosour - but my in-laws are, and they LOVED it! The recipe is great -- I added a little more lime juice (closer to 1 cup). I used Nellie and Joe's brand key lime juice. And use GRAHAM CRACKER CRUST I off of this site. Perfect.

Graham Cracker Crust I

Perfect! I'll never buy another premade graham cracker crust. This was so easy and so much better. I did it all in a gallon zip-loc bag (except melted butter in a dish) - so little clean up. GREAT with key lime pie.

Creamed Spinach Casserole

I used 2 packs frozen spinach. Cooked it in the microwave then squezzed it out to drain. Only used aboout 1 tablespoon butter. So So yummy!! The whole dish was eaten!

I thought these were good. The seasoning was tastey. But my family didn't really love them -- they didn't go back for a second (which is rare). And the left-overs didn't get eaten. But I might try it again anyway!
