Marinated Tuna Steak
Only marinated for 45 minutes but the flavors still came through. It would be amazing if it soaked overnight. I cook with natural hardwood charcoal so four minutes on one side & three on the other cooked this a perfect rare. Which is ideal with sushi grade tuna.

Louisiana Shrimp Creole II
Using the tomato paste & boiling down the shells suggestions really added to the flavors. Great recipe.

Sean's Falafel and Cucumber Sauce
I used garlic & onion powder instead of fresh, & dried parsley as well. It still turned out amazingly well. I cooked them in extra virgin olive oil.
