Cucumber Sandwiches II

I followed the recipe as written. People did like these, however, I find its one of those appetizers people would eat 1 and that's it. Not something you can really eat a lot of. I think the italian dressing called for was a little overpowering so I will cut down on that if i make them again.

Crab Cakes with Red Pepper Sauce

I am rating this on the red pepper sauce alone as I have another crab cake recipe I use. I followed the recipe exact for the sauce and it is the perfect compliment for crab cakes.

Pork Chops for the Slow Cooker

These were good but nothing i would rave about. I read alot of complaints from other members that the soy adds a lot of salt..so i used 50% lower sodium soy sauce and found that the salt flavor was not overwhelming. I only used 3 small boneless porkchops and this recipes barely made enough sauce to cover those in the crockpot... so i added a little water. I browned the chops in olive oil before I cooked in crockpot on low for 3 hours. I found that they were not too dry but think they would have been if I cooked any longer. The sauce is very tasty and I actually enjoyed it more over jasmine rice than on the pork chops themselves. I would make the sauce again in the future but most likely will not use on pork chops again.

Marinated Scallops Wrapped in Bacon

Followed reciped exact and these are the BEST! I marinated for about 2 or 3 hours and I did not find that they were too sweet at all, but i love maple. These were the first to go and had several people call asking for the recipe! definitely a keeper

Conh Chowdah (Corn Chowder)

This is an excellent starting point recipe. I did mostly substitute the heavy cream for 1 fat free half and half, 1 regular half/half and added only about 1/4 cup of the heavy cream just to thicken it a little bit and cut down some on the fat. I also added potatoes to it. Overall this is a great recipe. Everyone raved about it. It is rich and creamy even using mostly the half/half. Taste great after letting it sit over night. Definite keeper. I use all the time

Fettuccine with Sweet Pepper-Cayenne Sauce

I enjoyed this recipe and it was amazingly simple and quick to put together. I used bow tie pasta with red and yellow peppers, added some chicken strips, and used fat free sour cream. I took the advice of other members by waiting to add the sour cream and chicken broth at last minute. Sauce was flavorful and creamy. Thanks for the tip! I also did only use half the cayenne the recipe asked for and I found that plenty spicy for me. This re-heated great for lunches. Would make again.
