Banana Pound Cake With Caramel Glaze

Although this cake was delish, there must have been an error in the recipe when it stated that you should pour the glaze over the cake while still in the pan, at least if you are using a bundt cake like the picture shows. I let the cake cool in the pan for 10 minutes, then turned it over onto a cake dish before I added the glaze. Other than that, it was fantastic, thanks!

Black Pepper Beef and Cabbage Stir Fry

This didn't go over too well with the men in the family...maybe because of its presentation? I would suggest cutting the cabbage in larger chunks, and adding some more spices, as it was pretty bland.

Calabacitas Con Queso - Zucchini with Cheese

Baked Cream Corn

This was the best creamed corn I've ever had..maybe because I normally don't like it! I added a can of diced tomatoes, 6 Tbs of flour and omitted the onion powder, and it turned out fabulous...something to take to potlucks, perhaps:)

Mostaccioli

I used spicy pork sausage instead of mild because that's what I had on hand, but my family loved it like that! If you go spicy, though, be sure to serve it with cole slaw like I did;) Also, I added extra shredded cheese and onion. You can substitute the penne pasta for any type of pasta, really. I will make this versatile recipe again!

I used margarine instead of the bacon grease, too, and it turned out good. I added a little more flour while it cooked and simmered for about 10 minutes.

My Meatloaf

My husband is Argentine and had never had meatloaf before -- he LOVED this recipe! I made it for him once as-is, but the second time I reduced the onions a bit and added chopped zucchini and mushrooms -- he loved the second batch even more! Also, if you run out of ketchup, tomato sauce w/added salt works fine.

J.P.'s Big Daddy Biscuits

These biscuits were stellar! I made them in Argentina, where I had no access to a blender, which made me a little bit nervous..but I hand beat them and they turned out spectacular! I used all the milk but took the advice of someone on here and used a little less baking powder. I also definitely recommend refrigerating them a few hours before cooking them. I'll make these again, this time in the States:)

Viva Madrid Spanish Chicken

I substituted raisins for the dates b/c I didn't have dates on hand, but I think the sweet taste of the raisins worked out wonderfully! I would recommend using a little less garlic than the recipe calls for and using raisins instead of dates.
