No Bake Cookies V

I made the following tweaks after reading all of the previous reviews: used 3/4 stevia sweetener+3/4 sugar in the raw; almond milk; 1/4 cup margarine (I didn't have butter); 2 teaspoons vanilla; 3 cups of quick oats+ 1 cup shredded coconut flakes; creamy pb; and a pinch of cayenne pepper (gives it a kick and brings out the chocolate flavor). I made sure to boil it at a "rolling boil" for the full minute and have the add-in ingredients ready in a bowl to add as soon as the minute was up. I added the peanut butter last, per someone's recommendation. Phenomenal! The only thing I would do differently is to make sure I have crunchy peanut butter on hand, b/c that's how I made it growing up, and I think it really is better than the creamy.

Egg in a Boat

Used wheat bread and seasoned the eggs with rosemary, basil, salt and pepper like one user suggested. I added the egg immediately after turning to the second side. My hubby liked them! I want to experiment with other spices or adding cheese.

Teriyaki and Pineapple Chicken

I omitted the flour and mushrooms, reduced the teriaki to 1/2 cup, reduced the crushed red pepper to 1/4 teaspoon, and added a 20-oz can of pineapple with about half the juice. I cooked this in the slow cooker for 3.5 hours on high. It turned out pretty good served over honey, salt and butter-seasoned quinoa and bulgar.

Banana Nut Oatmeal

I cooked it on the stove because I was making a double serving for me and my husband. I added cinnamon and lite maple syrup to taste (maybe 1 teaspoon of each?). I didn't have walnuts, but pecans were great in it. I've had almonds in my oatmeal before -- also good! I did use bananas, but you could also add apples, peaches, strawberries, whatever fresh or canned fruit you have on hand. I used half 2% and half water, and added the ground flax seed on the top after it was done cooking -- you never want to cook flax seed, as it gets lumpy and nasty that way, and I've also heard that cooks out the nutrients. Overall, a good starter recipe. Thanks!

Banana Pound Cake With Caramel Glaze

Although this cake was delish, there must have been an error in the recipe when it stated that you should pour the glaze over the cake while still in the pan, at least if you are using a bundt cake like the picture shows. I let the cake cool in the pan for 10 minutes, then turned it over onto a cake dish before I added the glaze. Other than that, it was fantastic, thanks!

Black Pepper Beef and Cabbage Stir Fry

This didn't go over too well with the men in the family...maybe because of its presentation? I would suggest cutting the cabbage in larger chunks, and adding some more spices, as it was pretty bland.

Baked Cream Corn

This was the best creamed corn I've ever had..maybe because I normally don't like it! I added a can of diced tomatoes, 6 Tbs of flour and omitted the onion powder, and it turned out fabulous...something to take to potlucks, perhaps:)

Mostaccioli

I used spicy pork sausage instead of mild because that's what I had on hand, but my family loved it like that! If you go spicy, though, be sure to serve it with cole slaw like I did;) Also, I added extra shredded cheese and onion. You can substitute the penne pasta for any type of pasta, really. I will make this versatile recipe again!

My Meatloaf

My husband is Argentine and had never had meatloaf before -- he LOVED this recipe! I made it for him once as-is, but the second time I reduced the onions a bit and added chopped zucchini and mushrooms -- he loved the second batch even more! Also, if you run out of ketchup, tomato sauce w/added salt works fine.

J.P.'s Big Daddy Biscuits

These biscuits were stellar! I made them in Argentina, where I had no access to a blender, which made me a little bit nervous..but I hand beat them and they turned out spectacular! I used all the milk but took the advice of someone on here and used a little less baking powder. I also definitely recommend refrigerating them a few hours before cooking them. I'll make these again, this time in the States:)

Viva Madrid Spanish Chicken

I substituted raisins for the dates b/c I didn't have dates on hand, but I think the sweet taste of the raisins worked out wonderfully! I would recommend using a little less garlic than the recipe calls for and using raisins instead of dates.
