Oatmeal Chip Cookies

Yummy! The second time I made these I had only 1 1/2 cups of oatmeal. The result was thinner, but still delicious cookies. Had to add a little flour to the batch before baking the rest off.

Chocolate Cream Pudding

Fabulous. I used high quality unsweetened cocoa powder (about 1/2 cup) and 2 T veg oil instead of the chocolate. It's really dark and I can't wait to serve it tonight!

Cilantro Tomato Corn Salad

I also added the juice of half a lime and will likely add more cilantro...I cooked my corn, but have eaten a salad similar to this with uncooked corn, simply cut right off a raw cob.

Good Old Fashioned Pancakes

Perfect as is, but I did substitute 1/2 the flour with whole wheat and they were delicious! My son who's quite happy with Aunt Jemima mix pancakes loved them (and that was a surprise!).

Banana Sour Cream Bread

Halved recipe using 4 small bananas and 2 eggs, only have larger size bread pan so ended up with two relatively small loaves that I cooked only 45 minutes on 325. Not sure why it's "airier" than other recipes for me, I like them dense and I don't feel these are as dense as i like them. They certainly taste good, however. I followed one reviewer's instructions and folded in the flour mixture. I did beat the other ingredients together quite well, perhaps too much?

Potato Ham Bake

LOVED this. Yes, saltier than many dishes so if you have low-salt soup it's a good idea to use it. Ate the leftovers today for lunch! Sliced the potatoes "chip" thickness and was done in prescribed time.

Whoopie Pies

Great, but I think I may have cooked them a little too long. I used the Medium sized pampered chef scoop to make the pies so they are pretty small. Only say I cooked too long because they are dry the next day.l

Beef Burgundy III

I only used stew beef, can someone tell me if that's why this tasted so bland? It really tasted like over-cooked pot roast in a thick gravy.

Excellent, excellent, excellent and very easy to prepare. I made a gravy with the drippings and it certainly needed salt (was pretty sweet). Wouldn't change a thing!

Chocolate Chip Banana Bread I

I made this exactly as the recipe called EXCEPT I left out the chocolate chips (forgot them in the end...). It was more like Banana cake, very moist and a bit lighter than the dense banana bread that I was actually looking for BUT I liked it better than any other banana bread recipe that I've made. One thing, I cooked it FOREVER and it was still soft in the middle. My pan is a regular sized bread pan, is it too small perhaps?

Banana Bread V

Added the cinnamon and vanilla and used 1 and 1/2 cups of banana. Best EVER, next time, however, I'll add more walnuts because I love them and there's not quite enough for me in this recipe. I used an 8 inch loaf pan and cooked for about 55 minutes. Steamed it in aluminum foil as the reviewer mentioned and I'm enjoying my second piece as I type this!
