Apple Crisp II

I thought this was good but not exceptional. It was a little too sweet, for one thing. I followed the recipe as written except for using cider in place of water. It did not seem to have enough bulk in the mouth. If I were to make it again, I would use a little less sugar and double the topping mix.

Stuffed Pork Chops III

I used about half cubes and half crumbs for the stuffing. I cut small holes in the chops and widened it out inside so the stuffing wouldn't fall out. That worked well. I thought the stuffing had good flavor and I followed the rest of the directions, but the pork chops were still kind of chewy, not very tender. That's why I don't usually make pork chops. Maybe if you simmered this for an hour or two instead of just 30 minutes, they would become more tender.

Strawberry Chocolate Mousse Cake

If you are a person who thinks there's no such thing as too much chocolate, you will probably like this cake. Not having had too many chocolate-mousse-type desserts before, I didn't know exactly what to expect. I found it was very, very rich. Too rich and too chocolate-y for me. That could partially be because I only had 1/2 cup regular chocolate morsels and had to use semi-sweet dark chocolate morsels for the rest. I just thought it was too much of all the same flavor and same consistency in this dessert.

Super-Delicious Zuppa Toscana

I made this recipe exactly with the exception that I only used half the recommended red pepper flakes because I was afraid it might be too spicy for my 3-year-old. I thought it was good, but it needed salt, and it also seemed to be missing some kind of seasoning... maybe some parsley or oregano or something.

Grandma's Eggless, Butterless, Milkless Cake

This cake was interesting. If you know someone who can't have eggs or milk, then this cake would be perfect and probably very well-received. It did take longer to bake than stated -- baked in a 9x13 pan, I think it took 35-40 minutes. My knife came out clean, but when I went to slice this cake, I thought at first I hadn't cooked it enough, as it had a slightly odd texture. The changes I made were as mentioned by some other reviewers... I added two extra tablespoons of cocoa and 1/2 tsp. of salt. My son is allergic to milk and milk products, but not eggs. I made this cake for his birthday. I sprinkled powdered sugar on top and made a raspberry sauce that we served over it. All the guests said it was good, but I think next time I will try a mayonnaise cake instead. My husband thought it was just OK. If you were desperate for chocolate cake and didn't have eggs, mayonnaise, milk or butter on hand, this would probably satisfy you quite well.

Southwestern Pasta Salad

I followed the directions on this with the following exceptions: used dark red kidney beans because I didn't have black beans, and used grilled corn instead of canned. I used farfalle pasta. I thought it was OK. It did have a pretty fresh test. Not bad, but not great. I found the flavor of the lime and chili powder pretty strong. If I try it again sometime, I would tone down the dressing and maybe put in some diced grilled chicken and a little red onion. I think it would taste better as more like a pico de gallo type base.
