Eclair Cake

So simple, so good. Have even made using the cheapest pudding and graham crackers I can find and you can't tell the difference to the final product whether I used Jell-O brand pudding of Walmart store brand, same goes for the crackers which I find to be a plus. Adults and kids alike rave about this easy to make, no bake dessert.

Blueberry Coffee Cake I

Made this because I had a lot of fresh blueberries I wanted to use up before they went bad, making only a few changes. I added oatmeal (~1/4 cup) and walnuts (~ 1/4 cup) to the topping and upped the milk to 3/4 cup as others suggested. Baked it for 35 minutes in a 9 X 13 baking dish. Results?: AWESOME! Very much like the To Die for Blueberry Muffins on this site, the kids loved it which is a plus and great for breakfast or a snack. Reheating in the microwave is a must as this was best warm. Definitely adding this to the usual suspects.

Ghirardelli® Ultimate Double Chocolate Cookies

I made this cookie as directed and it is yummy, however I had a hard time making it into a round log. It was very runny before it went into the freezer, I think next time I will put the entire batter into the fridge for a few minutes before rolling it onto Saran Wrap. I stored them in an airtight container with a slice of bread and they were just as yummy if not better the next day.

Libby's® Pumpkin Cranberry Bread

I have been making pumpkin bread for weeks now and decided to make a Cranberry bread. I found this recipe and still had pumpkin leftover so I made this with a few changes (whole wheat flour, egg beaters instead of eggs, and applesauce instead of oil). Of all the pumpkin breads I have made this year this one is THE BEST. Moist and delicious.

Connie's Zucchini "Crab" Cakes

As a vegetarian I am always looking for new and interesting things to feed my family. This one was one of the best that I have tried from all recipes. I added a little more old bay but other than that I stuck to the recipe and they turned out great.
