Naan

Reviewed: Feb. 12, 2011
Great recipe - I forgot the egg as I'm not used to using it in bread recipes, but it still turned out REALLY good. We used a hot frypan with a coating of butter and once cooked we stacked the breads with a dab of butter and a smear of minced garlic between (not diet friendly but fine as a treat).

Heavenly Zucchini Salad

Reviewed: Dec. 18, 2010
Delicious. I substituted the sugar for a squirt of diabetic-friendly sweetner, and tossed in a litte mustard to the dressing. Wedges of boiled egg and cubes of cheddar added to the salad just prior to serving made it a complete vegetarian dinner - YUM

Tofu Parmigiana

Reviewed: Aug. 3, 2010
This was an easy and delicious quick meal. I froze the (firm) tofu and then left it to thaw during the day while at work. When I was ready to cook dinner, I pressed down on the slab of tofu to remove excess water and then cut through the middle (edgeways) of the slab. I quickly cooked the two slabs in a little olive oil, and sprinkled the slabs with garlic salt whilst they were cooking. I tipped 1/2 a can of italian herbed tomatoes into the oven dish, added the browned tofu and a sprinkling of parmesan, and then added the remaining tomatoes. Mozzarella cheese on top, then into the oven for 20 mins. Served with a green salad for a super speedy, yummy, low carb dinner! In summer I will add fresh basil leaves when serving.

Crazy Crust Pizza Dough

Reviewed: May 21, 2010
Very nice, and very quick. Wouldn't really call it a pizza dough but it serves the purpose of being a base to serve pizza toppings on when time is short. I too added baking powder, more flour, and reduced the egg to one. Will definitely use again when time is short. Thanks for sharing! :)

Very yummy. I added mushrooms and served it on top of buttered toast, garnished with fresh basil leaves, for a quick and easy light dinner.

Sweet Vidalia Onion Pie

Reviewed: Sep. 19, 2008
So yummy - definitely a "treat" recipe though! I cut down on the fat and added to the cheesiness a little by using a pottle of low-fat cottage cheese instead of half n half; I whizzed it in the blender with the eggs and cheese to make a smooth custard. Excellent as a wedge served with crispy crunchy salad for a vegetarian meal, or with crisp bacon and salad for meat eaters.

Lentil Loaf

Reviewed: Sep. 15, 2008
Lovely - make it. If pressed for time, use a tin of lentils (very cheap) and add stock instead of soup mix (2 teaspoons will do) I crumbled cornchips on top, and added grated cheese. I covered the whole thing with tinfoil and baked. YUM. Delicious on the night it was baked, and made a great cold sliced sandwich filling too. About to make it for the second time....

Peanut Butter Noodles

Reviewed: Jul. 31, 2008
I found this a little bit thick and "gluggy" when hot, but I put the leftovers in the fridge and in the morning I added a couple of handfuls of baby spinach, some cooled fried tofu and several good squeezes of lemon juice...... mmmmmmmmm, the result was the most delicious salad lunch! Thanks, will make again as a salad.

Red Cabbage With Apricots And Balsamic Vinegar

Reviewed: Jul. 31, 2008
Really yummy - I substituted celery for the capsicum (as I didn't have any caps) and sprinkled sesame seeds through the whole lot.... am taking the leftovers cold for a salad lunch at work tomorrow.
