This was an easy and delicious quick meal. I froze the (firm) tofu and then left it to thaw during the day while at work. When I was ready to cook dinner, I pressed down on the slab of tofu to remove excess water and then cut through the middle (edgeways) of the slab. I quickly cooked the two slabs in a little olive oil, and sprinkled the slabs with garlic salt whilst they were cooking. I tipped 1/2 a can of italian herbed tomatoes into the oven dish, added the browned tofu and a sprinkling of parmesan, and then added the remaining tomatoes. Mozzarella cheese on top, then into the oven for 20 mins. Served with a green salad for a super speedy, yummy, low carb dinner! In summer I will add fresh basil leaves when serving.
