Sean's Falafel and Cucumber Sauce

I really enjoyed this recipe! So I doubled up on the recipe because as mashing the first can, it didnt seem like it would be enough (in retrospect it really was more than enough). I realized I didnt have any eggs, but thought I would try it without as I have seen other recipes that don't use eggs. Also, I substituted cilantro for parsley for two reasons (1. i like the flavor more, and 2. if there was leftover cilantro, I had a use for it unlike parsley). Since I doubled it, I actually used one onion because it was a larger one. As for the tzatziki, I doubled that as well (as my fam loves sauces!). The only thing I added was a bit of garlic paste (about half a cloves worth). It made such a big difference to the sauce! As for cooking method, I baked a small batch to see how it would turn out (I had read this on another review for this recipe). I formed patties and then slightly liberally brushed it with oil Though slightly dry, I really did like the baked version as it cut the grease. Even in terms of the frying, though, it turned out great. I made pita pocket sandwiches out of it and found it to be a very enjoyable meal. The family really loved it too, which was great! Will definitely be making this again.

French Bean and Potato Sabzi

Great recipe. Good way to use french beans. Loved the enhanced flavor of the cumin after frying it. Will make again!

Greek Pasta Salad I

What a fabulous recipe- a real crowd pleaser! I used penne pasta, and couldnt figure out the dry ratio to wet ratio. I found that 2 oz dry cup of pasta should yield 1 cooked cup. So i made half a cup to yield 2. In my opinion, it really didnt. I ended up using 3 cups of dry pasta, and made double the dressing. I didnt toss all the pasta in the dressing. Instead I added a little dressing at a time and checked the flavor. This turned out fabulous! Instead of slices, I diced a small 'log' of pepperoni, and red bell pepper as well. For the most part, I left the dressing the same, maybe added a little more wine vinegar and sugar, as it tasted a little too olive oil like. But really it was a hit. Got tons of compliments and didnt have any left by the end of the party. Will definitely make this again!

Masale Aaloo (Spice Potatoes)

Loved this recipe. Followed it as is, and it turned out great. I loved that the potatoes were not too oily, and the spice coating, fried on the potatoes had such great flavor- especially the cumin! Will definitely keep this recipe on hand to make when I cook Indian food!

Honey-Garlic Glazed Meatballs

I took a chance and without ever trying the recipe, I made this for a bridal shower my friends and I were throwing. Bought store bought meatballs to save time (though Id rather make them), and made the sauce the night before. Took into consideration I like saucier meatballs and I needed to keep them warm in a crockpot, and we had a hit on our hands! Perfect blend of sweet and salty, and with a good hint of garlic running through it. Loved this recipe and will surely make them again. Perfect for a crowd!

Mexican Egg Rolls

These turned out simply great! I used one pkg of ground turkey. Once that cooked I added a little diced onion, diced red and green bell pepper, and frozen corn, along with a packet and a half of taco seasoning and a little extra salt (needed due to the extra ingredients. Once it cooked, I added the diced chilis to this mix along with a little cilantro. Rolled them with some pepperjack cheese. Splitting them into two batches first I tried baking them, but really they didnt turn out to great. The tops and bottoms were cooked, however the sides felt really chewy. I took the second half and fried them. They cooked all the way through and tasted just great! Served with a side of fresh guacamole. Will make again without a doubt (fried not baked!)

Chocolate Covered Marshmallows

What a great and quick dessert! Took this to a friends house when I really didnt have time to make a complicated dessert. Instead of semi sweet, took a regular milk chocolate bar and melted it in the microwave. Dipped marshmallow into the chocolate and then coated that with crumbled graham crackers that I crushed in a food processor. Refridgerated overnite- and still looked great the next day! Was a huge hit at the party!

Green Chili Chicken Burgers

Although I really enjoyed the burger, I think the oregano was a bit much. My family commented that it tasted a lot like the meatballs I make. Other than that the flavor was good. Maybe its a personal taste, but Im going to double on the green chili peppers and the jalepenos. I couldnt feel the effect of either peppers in the burger- and i know it wasnt spicy, but at least the flavor should have been more prominent. I made my own guacamole because I dont believe that sour cream is needed in a good guac. Other than that I will definitely make this again. It was moist and aside from the strong oregano did taste quite good. Also- instead of cheddar, I think pepperjack is in order to give it more of that southwestern flavor that it deserves.

Raspberry and Almond Shortbread Thumbprints

Although I liked this cookie quite a bit, I might have added a little too extract. Also, I found the dough a little tough to work with. It baked up quick which was nice. Although the taste was good, I would love if I could find a lighter version of this. Its a good way to use up jam, but consciously its too rich for me. I made the recipe as is, except that I used homemade blackberry jam, which did taste good.

Chunky Marinara Sauce

I thought this recipe was great! I added a little bit of italian seasoning, just to ensure the flavor was a little stronger. Also I ended up adding a little extra sugar and a dash extra of salt. The canned tomatoes were a little acidic. I made one full recipe of this, but I felt like I needed more. I used this sauce as a dip for meatballs. Will definitely make this again, but in a larger quanity!
