Classic Texas Caviar

Thanks for a recipe that doesn't use the bottled dressings! I'd been looking for a Texas (Cowboy) Caviar recipe that skipped out on the preservatives and hydrogenated junk... this recipe is fresh and wonderful!

Bacon Cheddar Jalapeno Poppers

Let's see... bacon and cheese... I think that combo would make anything 5 stars! This was no exception, it was delicious! I am overwhelmed with jalapenos in my garden right now, so it was a great way to use up my abundance. Also, unless you want "soft" bacon, cook it a little bit before hand. I like mine with a little crunch!

Zucchini in Sour Cream Sauce

I'm typically a 5 star girl, because I can normally tell if I'm going to love something by the ingredients. This did get eaten up, but had I not seasoned it at the end, I'm pretty sure it would have sat. The onion is basically a waste unless you double or triple it. I couldn't even taste it in the sauce. I added in garlic salt and black pepper to pump it up a bit. Great texture, (used yellow squash too), good taste, but not an amazing recipe.

Portobello Penne Pasta Casserole

I followed the recipe exactly, (perhaps just less spinach), and WOO-HOO was it good! I don't normally cook with butter or milk, (we're kind of health nuts), but we were having company so I thought I'd spare them from our typical ways. LOVED IT! Some people said it looks gross, but when you bake the cheese on top, I think it really looks great! I sprinkled parm on top at the end for presentation as well.

Simple Whole Wheat Bread

UGH, I am such a dunce with bread making. I think I made my warm water TOO warm and killed the yeast because my bread would not rise. The taste is amazing though, and I'm sure if I was a better bread maker, this would have been a beautiful fluffy loaf and a favorite bread recipe! ;)

Honey Nut Granola

For me, the beauty of this recipe is that it does not call for sugar! My husband and I try to refrain from sugar as much as possible, and we enjoy using honey and agave for substitutes. I made this into a cinnamon almond raisin granola to put on yogurt and it turned out great! Thanks for the recipe Karen!

Pioneer Cookies

Wow wow wow... such a great base recipe. I had no eggs and my husband was begging for oatmeal raisin cookies. Found this and used oil instead of butter, 1/2 sugar 1/2 agave, more oats less flour, cinnamon, nutmeg, dash salt, almond extract and vanilla extract and holy cow the house smells amazing and my hubby is killing the whole plate of em'! THANKS.

Veggies with Cheese Gravy

This had such common ingredients for my household, that I had to give it a whirl! The soymilk scared me, but it came out with great results! I doubled the gravy mix, (necessary), and thickened it with flour, then served it over toast for breakfast. I even added extra veggies I hade left over, (green beans & onions), YUM!

Blueberry Sauce

I liked this.. Even used agave instead of sugar and fresh squeezed orange juice! I made this to put over top the "blueberry buckle" from this site, instead of a crumb topping and it was AMAZING! Highly recommend giving that a shot if you've got a lot of blueberries. I believe other reviewers when they say the sauce is better the next day. It was all gone the first night, so next time I'll make more so I can have extras!

Arkansas Green Beans

Hubby really liked these. Not as healthy as we normally prefer and a little bit too sweet, but may try substitutions next time. Soy sauce was a fun addition, and we used fresh green beans and fresh garlic.

Farmer's Market Vegetarian Quesadillas

Very good! I do these on the grill as well. Just wrag veggies in foil and when they are close to done, throw the wrap on the grill until browned on both sides. As stated by others, all veggies will do. Homemade tortillas are always the best, but this is a great speedy recipe.

HOLY MOLY! Soooo good and soooo frothy! I make it with soymilk and agave instead of sugar and it is DEVINE! Better than anything I've bought at a cafe. This is going to be a daily tradition!

Marrakesh Vegetable Curry

Fun fun FUN recipe! Really pretty to look at! If you like spices, than this is your dish. I loved it, as I love many different styles of cooking and I love curry. My husband was not as crazy about it as I was because he "could not taste the veggies" due to the spices. If you like to be able decipher your flavors, than not for you... but if you like the mix and spice, that give it a try!

Blueberry Buckle

WOW! We loved this! A perfect mix between a cake and a muffin. We only used a half a cup of sugar and it was plenty sweet. Note that you won't be "pouring" this into a pan, you will be "spreading" it, as the batter is thick. Also, we omitted the crumb topping and did the blueberry sauce from allrecipes instead, turned out amazing. A true keeper. Thanks Carol!

Salmon Rosemary Burgers

WOW! I wasn't expecting these to be quite this good! I used canned salmon and this still far exceeded my expectations! I used mayo instead of horseradish, and added a little extra dijon/mayo to my mix since canned salmon is a little dry. It reminded me a little of crabcakes, so it would be great even without the bun!

Whole Wheat, Oatmeal, and Banana Pancakes

A very good pancake. I recommend using less sugar and more banana. I liked it best with an additional egg, some flax, and chopped strawberries in the mix. It has a subtle oatty flavor, which I really enjoyed.

Louisiana Sweet Potato Pancakes

My husband and I LOVE THESE! We had sweet potato pancakes at a restaraunt on a roadtrip once, and I've been searching for a recipe like it. This is even better. We top ours with cinnamon and agave! Beats all other pancakes!

Zucchini Patties

These were good... not great. They definitely reminded me of a potatoe cake. I was hoping that they would be flavorful enough to not need marinara and that the zucchini would shine through, but in the end we dipped ours as well.

Michael's Foccacia Bread

I always screw bread up, but this turned out just the way I wanted it... I made half a batch, (exactly as the recipe says to make it) and spread it thin on a cookie sheet and baked it for about 15 minutes, (it was like a flatbread), then cut it into sandwich size pieces and made grilled paninis with sundried tomatoes, mozzarella, arugala, avocado, red bell peppers, and the dressing from (California Grilled Veggie Sandwich). My husband and I agreed, it is the best sandwich we've EVER had! 100 stars!

Cornish Game Hens with Garlic and Rosemary

I use this on regular ole' Costco chicken thighs and just stuff the rosemary, lemon, etc. under the skin and it is THE BEST! We often eat this during the holidays and I can't say enough good things about it. I mix a little cold chicken broth and cornstarch and mix it in to the "sauce" to make a thicker gravy that we put over mashed potatoes. SO YUM!
