Double Tomato Bruschetta

So so SO good... I just used torta bread sliced in half and used A LOT of basil since my garden is going off and it was perfect perfect perfect!!! I also used all kinds of tomatoes that I had been given from a friend, (cherry, beefsteak, etc.), and it was still excellent. I agree with all of "Nicole's" suggestions, (she is the top review at this point), which do not actually "alter" the recipe... but are just words of advice. Incredible! I will make this every time I am overloaded with tomatoes.

Roasted Okra

Simply delicious. I couldn't imagine a better way to eat okra as I grew up in the country and okra always seemed to come fried... I much prefer baked and I love the simplicity and the wonderful texture and flavors. I love it as is, but if you want to treat it like a baked "okra fry" of sorts, it is great dipped in honey mustard as well.

Best Baked French Fries

I LOVE THESE! You must realize that no baked fry will ever be a fried fry, so don't expect that. These are exceptional compared to other baked fries I've tried from this site and this is now my go to recipe for fries. The little bit of sugar is a must so don't skip it! I follow this recipe exact every time, (and even skip the letting it marinade step when in a time crunch), and they are always all gone at dinner time. Start early though, because this is not FAST FOOD... Between seasoning, chopping, and baking, they do take quite awhile to make.

Baked Dijon Salmon

If you are looking to impress, this is the right recipe! I make all SORTS of salmon dishes with salmon that we always have on hand in the freezer and this one is always my personal favorite. It is beautiful too! I save a little bit of the dijon mixture for plating.

Fruity Curry Chicken Salad

Our FAVORITE chicken salad recipe! A lot of chicken salads I've had in my life are very basic: celery, chicken, mayo, onion types. The fruit and nuts and curry in this make this off the charts as far as the world of chicken salads goes!

Lentil Soup

I followed this recipe exactly and I'm still trying to figure out how this was "the best lentil soup" some folks have had. It was good but definitely not something to write home about. It stuck around in our fridge for a few days, which means I will probably not make again.

Russian Mushroom and Potato Soup

I had potatoes and mushrooms that had to be used up and this was obviously the right choice. I overloaded it with veggies so that it came close to being more like a stew, but either way, hubby and I loved it. I didn't change any ingredients and this was a great comfort food!

Avocado Feta Salsa

I would call this, "Italian Guacamole"... You're basically taking a classic dish and replacing cilantro with parsley and oregano and adding in a nice addition of feta cheese. It is nice to have another dish to use up our plentiful avos here in Maui. I used two decent sized avocados for this instead of one and felt it suited our tastes better.

Best Ever Meat Loaf

I had been trying to make meatloaf for MONTHS because it is one dish I've never tried to make, but every time I made mention of it, my husband did not seem enthused... So one day I had to use up leftover beef and just didn't tell him what we'd be having for supper. He looked suspicious when he took his first bite, and then exclaimed, "I don't even like meatloaf but this is AMAZING! It doesn't taste like dog food!". Heck of a compliment, eh? ;) Now he requests it frequently and no longer can say that he doesn't like meatloaf. Thanks Matt! Your recipe is the best we've both ever had and I followed it to the T!

Quinoa Tabbouleh

My husband and I LOVE this recipe and I make it at least once a month and for potlucks and bar-b-ques. We live in Hawaii, so this tabbouleh is refreshing for us all year. Hubby makes sure to request it if I don't make it soon enough. I NEVER measure any of the ingredients, I just do it to taste.... Plenty of lemon and a little more salt. YUM!

Bow Ties with Sausage, Tomatoes and Cream

You just can't go wrong with sausage in a cream sauce over pasta. I will say that I found the parsley to be a must... it added a wonderful lightness to a very rich dish. I used half and half with a little cornstarch instead of cream and I also grated fresh parmesan on top. Delish!

Grilled Corn on the Cob

It seemed like a lot more work then the usual ole' boiling method. The taste was there, but I don't think it surpassed boiled, buttered, and salted corn on the cob. I do love corn no matter which way you cook it!

Grilled Portobello Mushrooms

Grilled, simmered in a pan with o.o. and balsamic, or baked.. no matter which way you cook these babies, they are JUICY and DELICIOUS. I also add onion and make a garlic aioli sauce to spread on them. Fabulous!

Good. I like a light salad but I think perhaps there was too much cider vinegar for me... I would like to maybe half with balsamic next time. Still nice, just not perfected with recipe as is.

Pasta Primavera with Italian Turkey Sausage

Served this over leftover rice instead of noodles, and added in cabbage and greens from the garden, as well as tomatoe sauce since I didn't have any fresh maters, (which made it saucy and extra delish!). I think almost all veggies could go in this... It is an EXCELLENT base! For summertime freshness and use of the garden and INCREDIBLE TASTE, this gets 5+ stars in my book!

Banana Muffins II
