About this Cook
I live in paradise with my amazing husband, our two dogs, (one rotty, one pit mix poi dog), and a baby in the oven. I LOVE Hawaii because there is such amazing produce here if you know where to look. I've been very fortunate to travel so much at a young age... doing volunteer organic farming in Maui, The Big Island, Kauai, and Costa Rica. My favorite part of it all was going out to the gardens I learned to grow and using the delicious veggies, fruits, and herbs to make diverse dishes, (depending on where I was at the time!). Volunteering with people all over the world made the kitchen a great place to chat while gaining a wealth of knowledge on other cultures and their style of cooking.
My favorite things to cook
I like exploring and I like to use organic ingredients. Sugar cravings make me go on a dessert exploration which I try to use honey or agave as a sweetener, (unless I'm baking). I love to cook foods from different cultures, from sushi to curry to baked beans!
My favorite family cooking traditions
My Grandma's Graham Cracker Pie!!! The only misfortune is that she doesn't measure anything and no one can learn her recipe... (we've all tried watching and writing as best we can). I have a huge family,(that loves to cook), so Thanksgiving, Christmas, and Easter involve over 25 people and a ton of great food!
My cooking triumphs
My cooking triumphs are the nights when my husbands face lights up on the first bite and he breaks out in a cheeky grin, (that man loves good food!). Nothing makes me happier.
My cooking tragedies
I overcooked kale chips because I was preoccupied. They tasted burnt and were SUPER dry. No party in the mouth that night.

Double Tomato Bruschetta
So so SO good... I just used torta bread sliced in half and used A LOT of basil since my garden is going off and it was perfect perfect perfect!!! I also used all kinds of tomatoes that I had been given from a friend, (cherry, beefsteak, etc.), and it was still excellent. I agree with all of "Nicole's" suggestions, (she is the top review at this point), which do not actually "alter" the recipe... but are just words of advice. Incredible! I will make this every time I am overloaded with tomatoes.

Roasted Okra
Simply delicious. I couldn't imagine a better way to eat okra as I grew up in the country and okra always seemed to come fried... I much prefer baked and I love the simplicity and the wonderful texture and flavors. I love it as is, but if you want to treat it like a baked "okra fry" of sorts, it is great dipped in honey mustard as well.

Best Baked French Fries
I LOVE THESE! You must realize that no baked fry will ever be a fried fry, so don't expect that. These are exceptional compared to other baked fries I've tried from this site and this is now my go to recipe for fries. The little bit of sugar is a must so don't skip it! I follow this recipe exact every time, (and even skip the letting it marinade step when in a time crunch), and they are always all gone at dinner time. Start early though, because this is not FAST FOOD... Between seasoning, chopping, and baking, they do take quite awhile to make.
