Artichoke & Spinach Dip Restaurant Style

This is such a delicious dip and perfect for parties. I brought this to a party and it was gone within an hour. Everyone was raving about it and asking me to make more! I used a whole jar of ragu roasted garlic parmesan alfredo and it turned out great. The perfect consistency. Will definitely be making this again and doubling the recipe.

Simple BBQ Ribs

As a vegetarian, my boyfriend is always giving me about cooking meat. He seems to think my cooking skills are as limited as my palet. To prove him wrong, I made him these ribs for dinner tonight. He said, and I quote, that they were the best ribs he's ever eaten and they were even better than his dads (which is saying quite a lot!) I took the advice of some other reviewers and changed the recipe just a bit. First, I added cumin to the boiling water and boiled for an hour. I let it marinade for 30 minutes then baked it at 350 for an hour, adding more bbq sauce (sweet baby rays) after 40 minutes. This will definitely be a reoccuring dish in our house!

Fire Roasted Vegetarian Gumbo

I loved this gumbo, even though I did make a few changes. My grocer was out of serrano peppers so I used a mirasol pepper instead. I also used only two green peppers, and added two red bell peppers. I didn't have smoked paprika so I used regular old paprika. I left out the parsnip, the celery, and the black-eye peas because I don't like those. Next time, I think I'll halve the kidney beans and the okra and double the green and red peppers. Truly a delicious and adaptable recipe. One of the best Gumbos I've ever had!

Grilled Mediterranean Vegetable Sandwich

Awesome recipe, my husband and I are both vegetarians and this is a fantastic lunch. He loves the mayo, but I used Thousand Island Dressing on mine with some herbs sprinkled on top (oregeno, rosemary, thyme). Definitely going to be making this again soon!
