Macaroons

Reviewed: Oct. 24, 2010
Amazing! So much lighter than traditional macaroons! I followed another reviewer's suggestion and added 3 squares of melted baker's chocolate after adding the sugar and getting stiff peaks. It was the perfect complement to the coconut and a great way to satisfy a chocolate craving (and adds less than 20 extra calories)! Will be making these again - thanks!

Janet's Rich Banana Bread

Reviewed: Aug. 20, 2009
My new favorite recipe! I didn't have a loaf pan, but a 8x8 worked just great. I mashed the bananas first, though, rather than slicing. Try adding a handful of chocolate chips to a recipe - decadent and delicious!

Spicy Garlic and Pepper Shrimp

Reviewed: Jul. 24, 2009
WOW! Tasted even better than I thought! I added red bell pepper, then tossed the cabbage back into the mix for about 10 seconds before serving to get all the flavors together, then squeezed a little lime juice over the top - SSOOOOO delicious! I will definitely make this again. Very easy and fast!

Sugar Cream Pie I

Reviewed: Jul. 24, 2009
SO delicious! I would give this a 5, but the recipe gave no indication what heat level the ingredients should be cooked at. "Cook" by itself is a little too vague. It also needed a time estimate for how long it would take at a certain heat to become "thick and creamy." Mine started to thicken nicely at a higher heat, but when didn't seem to get any thicker, I poured it into the shell and broiled the topping. Even after chilling overnight, however, it still didn't get the consistency of the beautiful pie in the picture. I also recommend following another reviewer's idea and covering the edges of your crust with foil prior to broiling so your crust doesn't blacken. Very easy and delicious though!

Key Lime Pie VII

Reviewed: Jul. 20, 2009
Pretty good recipe! I would give this a 5, but the recipe needed some tweaking. First, 3/4 c. of lime juice was WAY overpowering. Also, 3 cups of sweetened condensed milk about made the pie pan overflow - 2 cups is the perfect amount. Overall, a very easy and tasty recipe (once you decrease the lime juice)!
