Cinnamon Syrup

Amazing! So much better than store bought syrup and no high fructose corn syrup. I let it cool and put it in an old syrup bottle. It does not need to be refrigerated - another plus over other homemade recipes I've tried.

Creamed Spinach III

I'm giving this 2 stars because it has potential, but really, no one in my family could finish it. I was skeptical about the amount of nutmeg - its not a "little bit" - it was a lot! I can see where half as much might have been nice, but none of us ate more than a few bites. I will try this again with no more than 1/2 the nutmeg suggested. Also, I don't see the need for a food processor - it seems like you'd get mush. Just drain the spinach, put it on a cutting board and use a knife to chop it up a bit. And a tip: if you're more likely to have cream cheese in the fridge, you can substitute it nicely for the heavy cream. Just add it in with the spinach and stir to melt it without burning.

Kathy's Roast and Vegetables

Wow! This was amazing! I don't have a slow cooker, but I made this according to the recipe and put it in a very large covered skillet and then into the oven at 250 degrees for about 7 hours. The meat cut like butter and everyone absolutely gobbled it up! The gravy is wonderful!

Sally's Spinach Mashed Potatoes

Wow! I finally got my 5 year old to like something with spinach in it!! (Just in time to start picking some from the garden!) I didn't add the cheddar as I was out and next time, I think I'll try this with 1/2 the butter and 1/2 the sour cream (without baking) just to make it healthier, but for a once-in-awhile decadent side dish, make it as is!

Pineapple Ricotta Muffins

For me this was just ok. I get where its going, but mine were pretty dry and crumbly after spending 21 min in the oven. I would suggest either not draining the pineapple (as the batter was unusually thick) or reducing the baking time to 15-20 min.

Irish Chicken and Dumplings

I made this according to the recipe and it wasn't great. WAY too much water! If I make it again, I would put in only 1/3 the amount of water but would use broth. As others noted, it is very bland as written. I wound up putting in more chicken seasoning and a few dashes of curry and bouillion (since I had used water). I guess it's a starting point, but it needs quite a bit of work, so as is, definitely not more than a 3-star recipe.

It is somewhat soupy - definitely needs less salad dressing/mayo or more tuna. And wow! That is just way too much dried green herbs! Green tuna salad? It looked like some kind of St. Patrick's Day version of tuna salad. Sorry but I can't figure out what other people like about this... Off to try another recipe.

Delicious! Though based on the recommendations of others, I did halve the oil. I'm not sure what difference the extra oil would have made, though having some is good in that it greases the grill. I will probably try this again with an even smaller amount of oil.

The Best Meatloaf

Tasty and juicy, but I would recommend sauteing the peppers and onions before adding them to the meatloaf - they were a bit too crunchy for my taste.

Shepherd's Pie VI

The potatoes were incredibly dry and there was way too much of them. I tried doctoring this by adding 1 cup of milk to the potatoes to make them a consistency that could be spread but this was still much drier than I've used before when making shepherd's pie and, of course, got even more dry in the oven. I also wondered about the blandness of the meat and onion mixture, so I added corn, peas, salt and pepper - to no avail as it was still too bland. I can't even begin to imagine how bland this would be if I hadn't doctored it a bit. The recipe should also call for at least twice as much cheese in and on top of the potatoes. With the quantity of potatoes I wound up with and the addition of the extra vegetables I had enough for 2 8x8 Pyrex dishes. I'm giving this 1 star, which I've never done, because my family did not care for it all.

Key Lime Pie VII

FANTASTIC!! For those that want to use up 3 cans of sweetened condensed milk: I purchased the larger Keebler graham cracker crust (the one that says it has 2 extra servings). Adjust this recipe for 10 servings instead of 8 and you will use up all the milk. My pie was perfectly set and delicious!

Supreme Scalloped Potatoes

Very good, but I found the directions to boil and then shred the potatoes confusing. It seems to me that potatoes won't shred if they are boiled until tender and I've never heard of scalloped potatoes made with shredded potatoes. Like most, I sliced them thin and didn't boil them. I did mix all the ingredients together (using 4.5 lbs of Yukon Gold potatoes), though I used a total of 2 cups of cheddar - most in the mix and the rest on top. I baked this for 40 min covered and 20 minutes uncovered. I would also caution that the recipe makes a huge portion. My family of 4 ate 1/4 of it. I would think that for most families, halving the recipe would make more sense. I did try freezing 1/2 of it as others recommended, but I don't recommend doing that - the potatoes were rubbery and just didn't taste as good.

Beef Barley Stew

In my opinion, there was too much wine in this recipe. It just didn't have the right flavor - I ate half a bowl and my son and husband took just 2 bites - with encouragement. I have used red wine in other soups, but this was overpowering. I would cut the wine in at least half, but since I have a better recipe for beef barley soup, I'm not planning on making this again.

Japanese Chicken Wings

Thanks for the great recipe - very tasty wings! I gave this 5 stars for taste, but want to add a few notes about cooking: I don't see how it's possible for one egg coat 3 lbs of wings - count on using 2 or 3 depending on how heavily you coat the wings. Also, I have a very large skillet, but I still needed to brown these in 3 rounds. Plan on a little extra time for this.

Spinach Quiche

I used 1/4lb of fresh spinach and 1/4lb of fresh mushrooms (that's what I had)and put all the cheddar in at once. For my store bought crusts, this was too much spinach filling for one quiche so I made two. (Though I added 2 eggs and 1/2 cup milk to make enough of the egg mixture.) Came out beautiful and tasted fantastic - thank you for the recipe! (Note: it was very buttery, which is delicious but not so healthy. I suspect I could have used a less - maybe even half - and still had nice quiches.)

Linda's Lasagna

Easy to follow and a great base recipe for lasagne. I don't care much for ricotta cheese and thought the cottage cheese was great. My husband is a BIG lasagne lover and said he would have preferred the ricotta. Either way, I encourage people to give the cottage cheese a try. Thanks for the great recipe!

Garlic Bubble Ring

What a fun and tasty recipe! I used 2 rolls of Pillsbury biscuits instead and had my 3 year old help me make the pieces into balls and drop them in the butter mixture which he thought was great fun. In the future, I would make only 1/2 the butter mixture - there is much more than can be used. My dough was swimming in it in the pan so I was a bit worried but it incorporated nicely. If you use the Pillsbury dough, you don't need to let it rise and it bakes beautifully in just 20 min. Really quick and easy!

Clone of a Cinnabon

This was so much easier than I thought! I wish I had made it long ago! I did take the advice of others and mixed the filling together before spreading it on and I do think this worked well. It was easy to get on and I didn't have oozing out problems at all. I did double the cream cheese frosting - this was probably a bit too much, but if you like frosting, you'll probably want a bit more than the recipe calls for.
