To Die For Blueberry Muffins

I followed the recipe exactly - checked them at 20 minutes and they weren't ready (sunk in rather than bouncing back) so I took them out at 25 minutes. The batter was bland, there weren't enough blueberries, the muffin was really dry and the crumb topping was overly crunchy. We did not care for these.

Valentine's Pie

Salmon with Dill

I was so happily surprised! I used wild salmon steaks because that's what I had, and spiced both sides. It looked like SO much spice to me but I was delighted that it turned out to be wonderfully delicious and SO easy!! It's rare to see more pepper than salt called for and I did cut the pepper in half because I have a 1- & 3-year-old who wouldn't have gone for that much, but it would also taste great for a teen or adult with the full amount of pepper. The cook time also worked perfectly for the thick steaks that I used. Thanks for this great easy recipe!

London Broil II

Absolutely delicious! My husband has a terrible habbit of putting BBQ sauce on all his steak. This time the open bottle sat next to his dish the whole time but he never made a move toward it. Excellent flavor - thank you!

Grilled Potatoes and Onion

Very easy and tasty! Has the lovely smell of home fries with hardly any work. I thought my 1- and 3-year-old might not care for this much pepper, but had no problem - they loved it! We've had it twice this week!

Southern Candied Sweet Potatoes

My potatoes turned out mushy, not candied or crispy/hard around the edges. There was a lot of sauce left after an hour of cooking and I made a point to use very large potatoes after reading some of the other reviews. The flavor wasn't bad but overall it was too mushy and too sweet for my taste. I don't anticipate making them again.

Barbecued Beef Ribs for Two

I've never made beef ribs before, but we've stopped eating pork, so I really wanted to give it a try. The recipe was easy, but I have to say that I didn't care for the ribs. Having not had beef ribs before, I'm not sure if it was the recipe or that I just don't love the taste of beef ribs.

Apple Pumpkin Muffins

Fantastic muffins! I made an extra big batch so I wouldn't waste the can of pumpkin - I set the recipe to 32 muffins and used 3 eggs (the adjustment is for 3 1/4 eggs but 3 was fine). I didn't use paper baking cups - just sprayed the muffin pan (check them after 30 minutes or so - I never made it to 35 min). I wound up with 30 muffins. I made some with topping and some without - excellent either way! We ate many, gave some to our neighbors and had enough to freeze as well. Thank you so much for sharing this recipe!

Chicken Wild Rice Soup I

This recipe is fantastic!! I used chicken thighs instead of breasts - I like them better for soup, otherwise, I made the recipe as is. For my taste, I would have liked a bit more salt but otherwise, I wouldn't change a thing! Even my kids (1 and 3) loved it. My 3 year old, who loves to help pop the stems out of mushrooms but never wants to eat them said to me "I guess I do like mushrooms after all mama." The flavor is pretty sophisticated, so I was surprised at how much the kids enjoyed it. If at all possible, DO add the wine -I know I often omit wine if I don't have any in the house, but the smell/flavor went from wonderful to extraordinary after I added a bit of Shiraz. Thank you so much for this wonderful recipe - I can only image how much more we'll enjoy it in the winter.

Garlic Bubble Ring

What a fun and tasty recipe! I used 2 rolls of Pillsbury biscuits instead and had my 3 year old help me make the pieces into balls and drop them in the butter mixture which he thought was great fun. In the future, I would make only 1/2 the butter mixture - there is much more than can be used. My dough was swimming in it in the pan so I was a bit worried but it incorporated nicely. If you use the Pillsbury dough, you don't need to let it rise and it bakes beautifully in just 20 min. Really quick and easy!

Linda's Lasagna

Easy to follow and a great base recipe for lasagne. I don't care much for ricotta cheese and thought the cottage cheese was great. My husband is a BIG lasagne lover and said he would have preferred the ricotta. Either way, I encourage people to give the cottage cheese a try. Thanks for the great recipe!

Blueberry Zucchini Bread

This bread was amazing!! Like eating zucchini bread and blueberry muffins at the same time. The first loaf was gone in a day! Thanks for the great recipe! Update: I like my loaves a bit bigger so I changed the servings to 16 (still easy to measure) and baked in 9x5 pans. This serving size gives you a loaf that tops the pan. (At that size, I cooked for 1 hr, 20 min.) Trust me, you'll appreciate the extra because this is incredibly yummy bread & it goes fast!

Chicken Pot Pie IX

This was a wonderful recipe. It was my first chicken pot pie and everyone loved it. Way better than anything frozen from the grocery store. I did have too much filling though - next time I'll cut that down to 3/4 of the amounts listed. Thanks for the recipe!

Spinach Quiche

I used 1/4lb of fresh spinach and 1/4lb of fresh mushrooms (that's what I had)and put all the cheddar in at once. For my store bought crusts, this was too much spinach filling for one quiche so I made two. (Though I added 2 eggs and 1/2 cup milk to make enough of the egg mixture.) Came out beautiful and tasted fantastic - thank you for the recipe! (Note: it was very buttery, which is delicious but not so healthy. I suspect I could have used a less - maybe even half - and still had nice quiches.)

Japanese Chicken Wings

Thanks for the great recipe - very tasty wings! I gave this 5 stars for taste, but want to add a few notes about cooking: I don't see how it's possible for one egg coat 3 lbs of wings - count on using 2 or 3 depending on how heavily you coat the wings. Also, I have a very large skillet, but I still needed to brown these in 3 rounds. Plan on a little extra time for this.

Beef Barley Stew

In my opinion, there was too much wine in this recipe. It just didn't have the right flavor - I ate half a bowl and my son and husband took just 2 bites - with encouragement. I have used red wine in other soups, but this was overpowering. I would cut the wine in at least half, but since I have a better recipe for beef barley soup, I'm not planning on making this again.

Roast Sticky Chicken-Rotisserie Style

Very nice chicken recipe - it really does taste like rotisserie chicken. I used black pepper in place of the white and the skin came out a bit too spicy, so do try to use the white pepper. The one drawback is that compared to my baked chicken, the skin was crispy in some places but a bit tough in others. The chicken itself was well cooked and flavorful. I followed another reviewer's advice and made gravy from the pan drippings, which was excellent. I used an 8x8 baking dish to cook the chicken and this kept more of the liquids in the pan for gravy.
