Pizzelles II

Reviewed: Apr. 1, 2009
Perfect! I do used butter, and to those that had trouble with the cookies not getting crisp: I noticed that a lot of us that had good results mentioned that we use butter. I'm not sure if that's the problem, but it's something you could try. I also opt for the vanilla to the anise (substitute in equal amounts) and feel free to try different flavors that you like (e.g, lemon, orange, etc.).

Monkey Bread I

Reviewed: Mar. 27, 2009
I actually bought a 4-pack of biscuit dough and despite the warnings, I didn't think the pan looked full enough, so I used all four. It topped my bundt pan perfectly - no run over. Next time, I will make just a bit more sauce for it though. Nevertheless, this was easy and delicious and my 4-year-old loved helping.

Brisket with BBQ Sauce

Reviewed: Mar. 6, 2009
I made this exactly by the recipe and I have to question cooking this at 300 degrees for such a long time. When I took my brisket out 5 1/2 hours into cooking, it looked burned. I completed the recipe and in the end it was either tough or burned to a black crisp. I did not care for this recipe.

Pumpkin Zucchini Bread

Reviewed: Mar. 5, 2009
Awesome! Pumpkin can sometimes not be as moist as some quick breads, so the zucchini ensures the moistness. I don't like to waste stuff, so I used a small can of pumpkin (1 3/4 cups) and doubled the recipe. I made 4 loafs, but they were small, so next time I'll do 3. Like other reviewers, I did increase the amount of zucchini. I used two smallish zucchinis for the double recipe I made (approximately 3 1/2 cups).

Golden Rum Cake

Reviewed: Feb. 22, 2009
I was talking with our friends about our Jamaican Wedding-moon and the rum cake we had as a wedding cake, so I found myself really wanting some rum cake. I wound up making this with golden rum because it was cheaper. The cake was incredibly moist and delicious and my friend called the glaze "spectacular." I will definitely make this again, though next time, I think I'll try spiced rum. Thanks for the wonderful recipe!

Pumpkin Bread IV

Reviewed: Feb. 22, 2009
I actually overcooked the 2 loaves I made and found something very interesting. The first loaf we ate was dry and over-cooked tasting. The second loaf I wrapped and stuck in the refrigerator for about 2 weeks. When I finally took it out to see if it was edible or if I should throw it away - it was delicious! Something about sitting made everything as moist and delicious as it should have been. Any bread that springs back from a mistake like that is a winner in my book!

Creamed Spinach III

Reviewed: Feb. 12, 2009
I'm giving this 2 stars because it has potential, but really, no one in my family could finish it. I was skeptical about the amount of nutmeg - its not a "little bit" - it was a lot! I can see where half as much might have been nice, but none of us ate more than a few bites. I will try this again with no more than 1/2 the nutmeg suggested. Also, I don't see the need for a food processor - it seems like you'd get mush. Just drain the spinach, put it on a cutting board and use a knife to chop it up a bit. And a tip: if you're more likely to have cream cheese in the fridge, you can substitute it nicely for the heavy cream. Just add it in with the spinach and stir to melt it without burning.

Pig Pickin' Cake

Reviewed: Feb. 3, 2009
A big hit at our Super Bowl Party! After wings and chips and chili etc, everyone was in the mood for a lighter dessert. To those who had trouble with the frosting: make sure you take the time to drain the pineapple and keep the frosting in the refrigerator until you need it (and after frosting). Thanks for a great recipe!

Fresh Pear Pie

Really does taste very similar to apple pie. It was nice as right now, pears are less expensive than apples and its just something different. Even my skeptics gave in and loved it!

Stuffed Cabbage Rolls

Reviewed: Jan. 29, 2009
This is a really good recipe. The only reason I gave it 4 stars instead of 5 is that you definitely need to at least double the amount of sauce and it does need some doctoring. I did spice up the sauce as others have recommended, but I also found it necessary to add a bit of pasta or tomato sauce to the tomato soup. I also think this recipe would be better if the cabbage was fully covered in sauce and slow cooked either in the oven or a crock pot.

Lemon-Pepper Salmon II

The taste of the fish wasn't good but not great. I'm giving this only 3 stars though, because broiling this marinade filled the whole house with smoke, resulting in having to open windows in January...

Sarah's Applesauce

Reviewed: Dec. 3, 2008
Delicious and easy! I agree that there is a bit too much liquid to use for mashing, but go ahead and add it while cooking and then drain it off a bit before you mash the apple pieces - it makes a wonderful cider!
