Salami, Cream Cheese, and Pepperoncini Roll-Ups

I made these as an appetizer for a Christmas party last weekend. Personally, I won't make these again because I found them to be labor intensive. Maybe it was the salami I purchased, but the salami was pre-sliced & packaged, therefore, kind of wet. I had to rinse & pat-dry each salami so the cream cheese wouldn't slide off while trying to smooth it on. The flavor was good and those who tried them did rave about them.

Mom's Favorite Baked Mac and Cheese

I made this exactly as stated, I think! I wasn't sure what processed American cheese meant, so I used Velveeta as I saw others used it too. Other than that, I followed the recipe. I thought it was great & everyone loved it! It's easy to make too. I will definitely make it again. Thanks! P.S. had leftovers the next day and this was even better tasting!

Italian Wedding Cake

I've made this twice now and people love it...especially my husband. I would have given it 5 stars, but for the denseness of it, I didn't. The flavor is just like a wedding cake, which is also a more dense cake, but this was just a little too dense for me. Of course, maybe I just need to make it a few more times because i think it's one of those recipes that the more you make, the better you get at it. The icing is really good too.

Baked Ziti I

I am of 100% Italian descent and grew up with my grandmother who cooked nothing but fresh from scratch italian meals. To be honest, she never really made baked ziti, mostly spaghettis and raviolis, linquine and clams. However, I had italian aunts who made baked ziti and it was definitely delish. But I have to say that this recipe by far is the best baked ziti ever, at least to me. I would have never thought to use sour cream, but it adds a flavor and a consistency that regular baked ziti doesn't have. I love this recipe and will only make my baked ziti this way from now on. Bon appetit or as the Italians would say, Mangia!

Pancakes

These weren't the best or the "fanciest" pancakes I've ever had, but they were the easiest & I had everything on hand when my grandson asked me if I could make him pancakes. I ended up doubling the batch & doing as someone else suggested - added a little vanilla. Really pretty good tasting, basic pancake.

French Toast Bake

I made this recipe and brought it to the company potluck. There was nothing left when I went to get my pan and many people told me how good it was. I didn't have time to soak the bread overnight so I just threw it all together and baked it. I did add an extra egg because the recipe doesn't say how much bread to use and I used a whole loaf of Pepperidge Farm white bread. This really did taste delicious and it had the consistency of bread pudding. Thank you for a great recipe Melissa!

Soft Christmas Cookies

This is an excellent cookie recipe for rolled & cut cookies. Every year for Christmas, I use a different recipe for my cut out cookies because I have never found a recipe that I am partial to. Well, this is it. I have saved this recipe & will use year after year. I made it exactly as stated, except that I found that after I mixed everything together, I needed to add a little more flour to make the batter more stiff for rolling & cutting (maybe 1/4 cup more). The recipe works perfect in that after you use the cookie cutters, the dough cookies come right up without breaking & it actually tastes good! This is a keeper. Thank you Georgie!

Grandma's Stuffed Celery

I'm glad I found this recipe. It is very good! I made it exactly as stated. My family & I also spread it on our bagels for breakfast. YUM! I think it was even better on the bagels than on the sticks of celery. I will be making this next time I need to bring something to a party.

Best London Broil Ever!

I thought this was very good and it smelled so yummy while cooking. A small taste through the cooking process revealed meat that seemed too dry to me, but I used convection cooking on my oven which I know nothing about, but I didn't have 3 hours to cook this so I cooked at 350 for 1 1/2 hours. This is kind of like a roast, but with a better cut of meat. I made it exactly as stated, except that I added cut up fresh carrots. I made mashed potatoes with this & the potatoes dipped in the tomato sauce were very tasty! Adding the carrots saved me cooking a veggie separately. My family really liked this. It's a very easy meal & a keeper for me.

Baked Honey Mustard Chicken

This was an awesome recipe & I agree with another reviewer that this is restaurant quality. I made it exactly as stated. This made my Rosh Hashana celebrting hubby very happy! I did add quartered and slightly peeled red potatoes into the baking pan with the chicken & honey mustard sauce. I will be making this many times again & I think the sauce could be poured over brisket, fish, pork, etc. MmmmMmmmm!

Blackened Chicken

Except that I used black pepper instead of white pepper, I followed the recipe exactly. I wish I had remembered to take a picture of the finished product because it really looked good! Unfortunately, I will never make this again. It was just way too hot & spicy for our taste. The chicken was tender though and I appreciate having tried a new technique for cooking chicken. It's possible I will try this way of cooking the chicken with a focus on coating it with garlic, salt & onion spices & see how that tastes. My family said it was okay, but a little too hot.

Tea Biscuits

I'm giving this 5 stars for such easy ingredients and instructions & my complete idiocy. I am not a baker and have only made drop type biscuits 3 or 4 times in my entire life and i've lived a long time. I used salted butter and this made the biscuits way too salty. I then made a half batch and left out the salt since the butter is salted. I added sugar to this batch because i was going to try to mix with the salty batch. Everything went well until I tried to roll out this dough. I ended up having a Lucille Ball episode. The sticky dough was everywhere. I decided to drop the biscuits into a muffin pan. I ended up with some pretty good biscuits, but definitely not the ones they were meant to be. I will have to try again - maybe take a rolled biscuits for dummies course.

Cuban Ropa Vieja

This is the first time I have ever had ropa vieja & I live in Miami - obviously, I am not Cuban. I couldn't say then how it compares to ropa vieja made by the natives but this was very tasy. I did not give it 5 stars because it seemed like it needed something, but not sure what. Maybe extra garlic like some reviewers here commented. I can honestly say though that I followed the recipe exactly w/o making changes. If I make it again, I might chop up some fresh onion to be used at the table once the dish is served up. And maybe I'll try the extra garlic too, but overall it was very good & the meat was very tender. I might also make this sauce next time I make a Mexican dish because I could imagine using it as an enchilada sauce (must be the cilantro).

Kyle's Favorite Beef Stew

I apologize as I didn't make the recipe exactly since I made this spur of the moment. I made with all the ingredients except wine and mushrooms, which I think would make this even better. Also, I didn't have time for crock pot cooking so I just made it on the stove. I did brown the meat as stated and removed from pot and then sauteed the onions and garlic in butter. Then I added the browned meat and the rest of the ingredients back into the pot to cook for about 4 hours. I have to say this was truly delicious. Everyone at my house (1 hubby, 2 sons, 1 friend) loved it. I can't wait to try with the wine and mushrooms.

Roast Sticky Chicken-Rotisserie Style

This really is good - even the hubby who is not big on chicken said how good. It was easy too. I took a tip from a previous recipe I made from this site for roast beef and mixed the olive oil with all the spices. Let it sit for 10 mins. and then rubbed all over the bird. Very good and will definitely make it again. In fact, I purchased two birds and made them in my biggest roasting pan so that we had one chicken one night, and the next night, when I wasn't going to be home, my hubby and boys heated up the 2nd bird.

Spicy Rapid Roast Chicken

I made this tonight and it was very good. For ease, I mixed together all the spices with the olive oil, let it set for 10 minutes and then rubbed it all over the chicken, even inside the cavity. I cooked exactly as stated and it turned out beautifully. I will definitely make this again.

Slow Cooked Corned Beef for Sandwiches

I never have had corned beef and never wanted too, but my hubby likes it and so I thought I would try this for St. Patty's day. This recipe is woderfully good! I just used regular beer too because I did not realize until after I purchased my budweiser that the Irish use stout beer, but no matter. This was wonderful and I added potatoes, carrots, and cabbage when I got home from work, but it wouldn't all fit in my crock pot so I took the meet out and put in a casserole dish to keep warm, while i poured out the juice it cooked in into a regular pot and placed the cut up veggies in it and boiled/simmered it for about 30 minutes. Well I can tell you that i now love corned beef and will make this again to make the sandwiches. my husband and sons really liked it too!

Enchilada Casserole III

I hesitated to add this to my recipe box because I thought how will this be different from any other mexican recipe that have the same basic ingredients, cheese, ground beef, refried beans, some sort of taco shell. Well, this was really good! My sons really liked it too. I did have to change something (sorry) because I could not find the enchilada sauce it calls for at my grocery store, so i had to follow some suggestins from other reviewers and use the taco meat powdered stuff, but it was still very good. I will definitely make this again and again.

Ground Beef Shepherd's Pie

I found this recipe because I was looking for something to do with the ground meat I had for dinner and couldn't stand the thought of my usual mainstays. This was very good. I know many people do not like when other cooks change the recipe, but I had to make some changes simply because I didn't have all the stated ingredients. So I substituted boxed mashed potatoes for real (I use extra milk and real butter to help with the fake potatoes) and canned mixed veggies for the tomatoes and I added a little worstechire. Everything else was the same as the recipe. It was really good. My husband said it was as good as the shephard's pie at Cheesecake Factory. Like one reviewer said, this is a recipe that is basic and you can change up when you want. Great recipe that I will use again and again!

Brunch Potato Casserole

This was awesome! I made it for our Christmas potluck at work and not a drop was leftover. I am going to make it again tomorrow for another party that I am going to. I made it using Oscar Meyer real bacon bits because I have no bacon cooking talent - I always burn the bacon or undercook it. Thanks for this awesome recipe!
