Orzo with Parmesan and Basil

Very Good. I thought it was going to be a little bit more creamy but the flavor was great. Did use a little more chicken broth. Wonderful to use basil grown from our garden. Definately something I would make again, may even add roasted vegetables next time.

Homesteader Cornbread

I took other suggestions and changed cornmeal to 2 cups and flour to 1 1/2 cups. Bake in pan less than 9 x 13 but not 8 x8 and you will get a very moist, dense delicious corn bread.

Chicken Lo Mein

The flavor was great especially if you up the fresh grated ginger. The whole box of linugine was way too much; I woulds say 1/2 box is sufficient. Also add additional veggies; I chopped fresh red pepper and one carrot to give additional veggies and color.

Chicken Parmigiana

Did not like how the cutlets came out. I used very thin cutlets and the breading never browned up when baking and they came out very very dry. Good thing I had another package of cutlets on hand and this time I fried them. I used italien flavored bread crumbs and added some salt and pepper and some grated romano cheese to the egg mixture for some extra flavor.

Mom's Baked Macaroni and Cheese

This is a good start to the recipe I make. I use 2 cans of cheddar cheese soup and one can of cream of celery. I first sautee garlic and onions in oil. Add the soups, block of cheddar cheese and a can of whole milk for each can. Stir until cheese and soups are melted. Add box of cooked macaroni and stir on stovetop. Pour into large baking dish and cover with breadcrumbs (can mix with some butter I do not). Bake for about 20 minutes @ 375 until bubbly.

Avocado, Tomato and Mango Salsa

This salsa is delicious and great over fish or with chips. All of my guests loved it. Only change was to limit cilantro to 1T max but that is a personal preference as I am not a fan of cilantro. Great salsa to bring to a party.

Spicy Lime Grilled Shrimp

Delicious, added some sea salt as my cajun spice mix had no salt. Grilled on the stovetop. Also grilled thick slices of red onions to go along.

Garlic Chicken with Orzo Noodles

This was very good but could be five stars I think. Next time will add some diced tomato and sautee the orzo with garlic before cooking in chicken broth. I also might sautee the chicken in some white wine and garlic as well. Liked the heat of the red pepper flakes. Also, will use more spinach next time. Very good for a quick meal that left us a lunch for the next day!

Whole Wheat Muffins

Blueberry Dump Cake

This cake was very easy to make and delicious. I did make a few changes by decreasing the sugar to 2T and adding 1T fresh lemon juice. As another review suggested, I did use a pastry cutter with the cake mix/butter and that worked great.

Rustic Sausage Pasta

Very good, very easy weeknight dinner. I just increased some of the spices and left off thyme. Did not think thyme went with pasta sauce. I also used the 28oz canned of diced tomatoes and one small can of tomato paste in place of the tomatoe sauce.

Dave's Ultimate Guacamole

I give this four stars as this is a great base recipe and I added my own touch. One clove of minced garlic, extra hot sauce as we like it hot, some diced red onion and some lime juice. Not a fan of cilantro so I left it out but may chop a real small amount next time. The key is to let it all set in the refrig for a few hours. Great with multigrain chips and beer with lime!

Baked Pesto Chicken

this was really very good. I used some homemade pesto since this time of year it is very easy to buy very fresh basil at the local farm stand and make your own. I will next time boil some pasta to collect the delicious sauce the chicken makes and use with additional pesto. Already thinking about making this again next week once I can go to the farmstand over the weekend! Highly recommend.

Key West Chicken

This marinade was very good. I marinated almost 10 hours or so. Besides the great flavor, I think grilling vs baking or broiling really adds to it. I will use this recipe again for sure.

Angel's Old Fashioned Beef Stew

This beef stew is very good. I will say I am not a big fan of stew meat and used sirlion beef tips instead. I did not have boiling onions so i used a whole onion cut up. I also add a few tsp of gravy master for some additional flavor and two bay leafs. I add the vegetables and potato at the last hour or so of cooking. Freezes very well too.

Six Can Chicken Tortilla Soup

I make a similar version of this by using my crockpot. I put three or four skinless chickent breasts in first, then can of chicken broth, jar of medium salsa, can of corn (drained), can of black beans (drained)and can of fat free refried beans. Sprinkle in some chili powder, cayenne pepper and cumin. Cook on low for 6 hours; pull chicken out and shredd and put back in for one more hour on low. Hearty and healthy. Freezes well too. Not six cans since I use fresh chicken, but close!

Valentino's Pizza Crust

I have tried many of the pizza dough recipes on this site to get the "perfect pizza parlor" crust. there have been several that were not too good and some that were great. But in the end This pizza recipe by far is the best. I made no changes to the actual ingredients. I only added a tsp per cup of flour of King Arthur Pizza seasoning that a friend recommended to me. But the crust was great with or without the seasoning. (fabulous with the seasoning and I highly recommend it!). I played around with the cooking temps and time and found 500 degrees bottome shelf for 5 minutes for pre cook and 450 for about 15-20 on the next shelf up with toppings. I am a happy girl...now I move onto toppings. thanks to all of your responses. This site helped me in my quest for a great homemade crust.

Spaghetti Squash Saute

I had never made spaghetti squash and this was very good, I did cut way down on the butter an only used 2 tsp of olive oil and 1 tsp of light margarine when cooking the onions. I chopped some fresh mushrooms as well. Used some kosher salt and fresh ground pepper.

Awesome Grilled Cheese Sandwiches

We really liked this recipe, the only reason I did not give it 5 stars was because the browning process was great on the first side that was face down on the cookie sheet but when flipped the side on the cooking sheet did not brown very evenly --hardly at all. If I pressed down on the sandwich once flipped that seemed to help.
