Liz's Astounding Chocolate Chip Cookies

Very good moist cookie. I did use the butter Crisco shortening because that is what I had in the pantry and swapped the amounts of sugar, brown sugar was 1/2 cup and white granulated was 1/4 cup.

Classic Meatloaf

Very good. I made in the morning and let rest all day. When ready to serve I sliced and put in fry pan with Pam to brown both sides. I definitely needs to "rest" to have all the flavors blend. And to mention I cooked for almost one hour before the glaze. With the glaze I put back in oven 20 min only.

Seared Sea Scallops

This recipe was good, tweaked a bit. No flour, the scallops were so sweet and firm I didn't think flour was necessary. Half the salt and half the lemon pepper. I also pan seared them all, put on plate and made a sauce with the lemon juice and added some wine to de glaze the pan. Put them back in the pan for a minute and dinner was done.

Pesto Primavera Tortellini with Chicken

I loved this recipe. I actually used it as a cold pasta salad after preparing. Everyone loved it. I sautéed the chicken with some garlic and veggie pepper. Did not have asparagus on hand so I used a can of chopped artichokes, in water and drained them. Sautéed them at the end of cooking the chicken. Mixed everything all together and chilled over night. This was a huge hit at our party yesterday. I would give it five stars but did not follow exactly.

Chicken Tortilla Soup V

Colleen's Slow Cooker Jambalaya

Very good, made for the first time today. Very spicy, and when I say spicy I mean red hot spicy. I would tone down the cayenne pepper a bit and/or be careful what is in the Cajun spice. A lot of blends add cayenne. But overall very good, very easy, and I used turkey kielbasa so a bit more figure friendly. I might try a different sausage next time just to see.

It's Chili by George!!

Very good and so easy. I did not use tomato juice,not a fan but used one cup of beef broth. Also did not have pinto so used black beans as the second bean. Through in a diced jalapeno pepper for some extra kick. Was careful not to use all of the seeds, just enough to give it additional heat. Really basic and a good base to alter to individual tastes.

Cream of Cauliflower Soup II

This was very good. Only by mistake did I make a few changes...all of the vegetables sauteed fine, but in another pot I had the broth simmering and I added everything plus all spices including nutmeg. Once all of the vegetables had simmered I let them cool overnight in the pot. (i wake up early!) After they had cooled I pureed with my immersion blender, added milk and stored in the refrigerator for the week. Very good. Did not use parsley, had none that was fresh.

Banana Chip Muffins I

I made these last night and brought to work today. The office loved them. They are the best critics for sure. Made exactly as written except added some cinammon. I hestitate to give 5 stars (can i give 4.5?)...there was an after taste of salt or baking powder , but that was my opinion not the opinion of my staff at work. Next time I will add a little vanilla and this will help. But so easy to make, have all the stuff on hand...will definately make again.

Day Before Pay Day Fried Rice

Rice was bland. A good start but needed more flavor. I add chopped garlic, some fresh ginger. Diced red pepper, and some sesame oil. Used day old rice which tends to wwork better with fried rice.

Sweet and Spicy Soup with Black-Eyed Peas and Sweet Potato

Made this last night and honestly made adjustments simply because of what I had on hand vs. going to the store. I used 2 cans of black beans drained, 1/4 can diced tomatoes, oven roasted fresh sweet potato along with the red pepper in a little olive oil, gave it some extra fire roasted taste. Skipped the mustard, onion, and garlic powder and added a little extra garlic. Very tasty, something I would definately make again because I usually have all on hand. Would be good served with some brown rice.

Best Butternut Squash Soup Ever

Very good. I also roasted the potato and squash before it all went into the pot with onions and garlic. Used veggie broth since I had no chicken broth on hand so I left out the bouillon. Next time will use chicken broth. Used a dash of cayenne pepper because I always spice my soup with cayenne. Good comfort food and will keep for the regular rotation of soups.

Krystal's Perfect Marinade for BBQ or Grilled Chicken

This was very good; made as printed with no changes. I let the chicken marinate over 4 hours and used chicken thighs and legs. The marinade is a strong one and I thought the darker meat would be better. I think I would use this on sirloin steak tips or a flank steak as well.

Hot Artichoke and Spinach Dip II

Made this tonight for a house full of teenagers. Very well received. I did leave out the basil, salt and garlic salt since there was ample garlic. The cheese provided salt too.. very good and easy since I had everyting on hand. I use the marinated artichoke in a jar which add additional flavor.

Luscious Spinach Artichoke Dip

Substituted fat free for the mayo, sour cream, cream cheese but not the romano cheese. Used the real thing freshly grated at my favorite deli. So worth the splurge. Used a little extra and sprinkled on top so it browned and had a little stronger cheese flavor. Great recipe...

Spinach Brownies

I was asked to make these for Thanksgiving; actually a version of this recipe but I was more comfortable with the recipe on AR. I will tell you that I did read the reviews and made the following adjustments: I used 4T butter only; using some of it to sautee onion, garlic and mushrooms. Used one box defrosted/drained chopped spinach. Otherwise followed the directions and they were a big hit.

Chicken Stir-Fry

I liked this recipe. Pretty basic, no wow flavors but really quick and easy to follow. I added red pepper flakes for some heat because that is what we like. Had no celery so I replaced with some fresh mushrooms. Maybe could have used some white wine at some point or sesame oil for additional flavor? but overall, easy and quick basic recipe.
