Downeast Maine Pumpkin Bread

My daughter helped me bake these today and boy, did my kitchen smell amazing! I made the following adjustments: subbed milk for water, used 1/2 c oil and 1/2 c applesauce, and added 1 tsp vanilla. The bread is very moist and flavorful!

Cathy's Banana Bread

The sour cream makes this bread extra special. I used butter in lieu of margarine and sprinkled in some cinnamon and cloves, but left the rest of the recipe unchanged. Super moist and delicious!

Sweet Potato Pie I

I baked this pie for Thanksgiving and it was absolutely delicious!. I boiled two larger sweet potatoes, instead of just one. I used the mixer on it's highest speed to "mash" the sweet potatoes before adding the butter. I used 1/2 c of light brown sugar and 1/2 c white sugar. I added a squirt of lemon juice and 1/4 t each of cloves, nutmeg, and ginger. I completely forgot the cinnamon, but nobody could tell. Instead of milk, I used evaporated milk instead. When filling the pie, I didn't use all of the mix because I thought it would be too much. I baked the pie for 55 mins and it was perfect! I served it the next day topped with a dollop of whipped topping :)

Grilled Lemon Herb Pork Chops

These pork chops are so tender and tasty. I like to use bone-in pork chops and broil them, since I don't have a grill. My bf always asks for seconds!

Country Pumpkin Muffins

These muffins are so flavorful! I baked these for my 5 yr old's kindergarten class, so I omitted the raisins and walnuts and they still turned out great. I made a few changes: I used a whole 15 oz can of pumpkin and 1/4 cup of milk instead of the water. I love baking these muffins, the kitchen smells amazing!

Laura's Quick Slow Cooker Turkey Chili

This chili is yummy! I added a can of diced tomatoes and a can of green chilies for extra flavor. I served it with homemade cornbread on the side and topped the chili with sour cream and shredded cheddar cheese. Perfect for a chilly fall night. Thanks for the great recipe!

Slow Cooker Chicken Stroganoff

This was absolutely delicious! I added mushrooms to the crock while the chicken cooked. The sauce was a bit too thick after I added the cream cheese and the soup, so I added some milk to thin it out and turned the crock pot on high to heat it more quickly. I also added freshly ground pepper and a dash of thyme for flavor. I served this over egg noodles, with cauliflower on the side. Thanks for the great recipe!

Minestrone Soup I

I used this recipe as a guide, being that I didn't quite have everything on hand. I shredded leftover Thanksgiving turkey and added it to the soup. I used beef bouillon cubes and water in lieu of the chicken broth. I subbed garlic chili sauce and medium taco sauce for the tomato paste. I used black beans, corn, carrots, parsnips, celery, diced tomatoes, onions, red potatoes, and added some extra spices, such as a bay leaf and some adobo. This made an excellent spicier version of minestrone. I served this with a side of fresh baked cornbread.

White Chocolate and Cranberry Cookies

These were great! I subbed whiskey and a splash of vanilla for the brandy. I also used 1/4 cup butter and 1/4 cup shortening to allow for a chewier, less flat cookie.

Southwestern Vegetarian Pasta

This is one of my favorite pasta dishes to cook! I ran out of chili powder, so tonight I used 2 Tbsp taco seasoning instead. I cut back on the cumin and used only 1/2 tsp, since there is some in the taco seasoning. I used rotini pasta and topped it with cheddar cheese. This always turns out great, my bf and daughter always ask for seconds. Thanks for the great recipe!

Make-Ahead Mexican Salad

The only changes I made were to add a small can of sliced black olives and some taco seasoning to the top of the salad. I also mixed some ranch dressing mix with the sour cream before adding it to the salsa to give the dressing extra flavor. This salad was fantastic!
