Sloppy Joes II

I made this for my son's first birthday party, and everyone loved it! My husband won't let me buy Manwich (he thinks it's gross), so I had to find an alternative. This was delicious and super easy to make! I will definitely make it often for our family dinner. Thanks for the recipe, Tamara!

Southern Pulled Pork

I was really looking forward to making this recipe, but I was disappointed in the results. The liquid smoke stunk up the entire house while it was cooking and the smell was overwhelming. The end product didn't have a ton of flavor, which was surprising. I had to add BBQ sauce to my sandwich, which I didn't originally plan on doing. I used 2 cups of water instead of 4, and it still seemed like too much. However, the pork was very easy to shred, and I'll probably make it again but add less liquid smoke and more spices.

Banana-Zucchini Bread

Loved this recipe! We grew a ton of zucchini in our garden this summer and I didn't know what to do with them. Everyone was hesitant to try my bread because who combines zucchini and bananas?? But the feedback was always two thumbs up! I omitted the cranberries and walnuts, and substituted mini chocolate chips instead. YUM!

Zucchini Patties

Overall, this recipe was good. I had a hard time finding the right amount of olive oil to fry these in. Too much made them too greasy, and too little made them burn. The taste was good, both fresh and cold. Applesauce on top added a little extra kick. I made these two weekends in a row which was overkill, so I would have to limit making these to special occasions.

Rockin' Salsa

This is the best ever salsa recipe! I first made this with my in-laws (we had never made salsa before). We were blown away with how great it turned out. I now make double batches any chance I get. I give out jars to friends and family, who keep asking me for more. Several people have asked me for this recipe, and friends of friends are even requesting it. It's quite the talk of the town! The changes I make are eliminating the banana peppers, and possibly adding one jalapeno for a little kick. I also use a food processor to chop the onions and peppers up (this saves a lot of time/headache). I also add a bunch of cilantro about 30 min before it's done cooking. I have also cooked this in a large crock pot with the lid sideways. It works fine, but takes about double the cooking time. I really wish I could give this recipe more than five stars!!

Hurricane Carrots

This was surprisingly good! I made this as part of my mom's birthday dinner, and all the guests loved it. I substituted dried cranberries for the golden raisins, added one chopped celery stalk (for extra crunch and color), and only used a splash of olive oil instead of the 1/2 cup vegetable oil. I will definitely make this again!

Spicy Garlic Lime Chicken

I made this for a work potluck and received rave reviews! I took six jumbo chicken breasts and pounded them so they were semi-flat, then cut them in half to make 12 servings. I then rubbed the spice mixture on both sides and refrigerated them overnight (instead of tripling the mixture, I quadrupled the mixture for an extra kick). I threw them on the grill for lunch, and basted them on both sides with the garlic and lime juice upon turning them. We then ate them as sandwiches. They turned out spectacular!!!

Easy Cheese Ball II

I made this for a Halloween party this weekend and it was a hit! I threw the cream cheese, ranch mix and 3/4 bag (2 oz.) of sharp cheddar into my Ninja. After it was mixed, I rolled it into a ball on a piece of wax paper and put it in the fridge for 30 min to harden up. Then I rolled it in a mixture of bacon bits and the remainder of the cheese. I added a face using black olives, and a celery stick for the stem. Served it with Ritz crackers. Everyone thought it was clever, and most importantly, tasty! I will definitely use this as my go-to cheese ball recipe in the future!

Slow Cooker Macaroni and Cheese I

I made this for my 5 year-old son's birthday party and it was a hit among both kids and parents alike! I made a few small changes after reading some of the reviews here. My changes: I doubled the recipe; used 2 eggs total; stirred in all but a handful of cheddar cheese (which I added to the top 30 min before serving; added 2 tsp. total of dry mustard; cooked it on high for one hour, then low for three hours; stirred the ingredients about once an hour. The bottom burned a little bit but it wasn't too bad. I'd definitely make this again, and a couple parents asked me for the recipe too!
