Burmese Chicken Curry (Gaeng Gai Bama)

My picky 8-year-old took seconds saying "I love this chicken." My husband who rarely comments on my cooking said, "This one is a keeper." My teenager wasn't quite as enthusiastic but said it was "good." He has a cold, though, so that may have affected his experience. I could not get the sauce to become "creamy" as described, but it still tasted good. I accidentally used chili powder instead of curry powder. I noticed it right after I covered the chicken with water, so I dumped the chicken into a colander, rinsed it, and started over. Not sure if the brief soaking in chili powder affected the taste or not.

Slow-Cooker Posole

This was scrumptious. The pork was very tender. It will be a new regular addition to our menu. I added just a little water until it covered most of the other ingredients. In the last 30 minutes I added about 3/4 cup of refried beans and about 1/2 cup of black beans, just because they were leftover from a previous meal.

Tangy Cucumber and Avocado Salad

I make this frequently, often served with Mexican food. It is a very light and refreshing salad, perfect for summer. Whenever I've shared it at a potluck, I've had requests for the recipe.

Chipotle Shrimp Tacos

I've made this again and again. The cilantro and lime are delicious with the shrimp. It tastes fresh and light, but it's filling. Perfect for summer, but we have them year-round. I always have leftover chipotle peppers in adobo sauce, so I put them in a small Mason jar in the refrigerator, and they last for months...maybe years...I've used them up before then.
