About this Cook
I'm a busy and content wife, mother of two boys, and teacher. My sons are 9 1/2 years apart, and the youngest was born in Guatemala, so I'm always on the lookout for Guatemalan recipes (only one on this site so far).
My favorite things to cook
Soup, Mexican/Latin American dishes, homemade macaroni and cheese.
My favorite family cooking traditions
I come from a Mennonite background, and our family gatherings always involve the most delicious food. One family staple is called "fluff." It is a delicious homemade vanilla pudding/custard with a graham cracker crumb in the bottom and on the sides of the bowl. Sometimes sliced bananas are added. It is heavenly, but I've only made it once because it was so difficult!
My cooking triumphs
My family loves my cooking, so that's enough.
My cooking tragedies
I accidentally used vanilla yogurt instead of plain yogurt in a chicken dish. It smelled ghastly and was unedible. We call it my "vanilla chicken", and it's become a family joke.

Chipotle Shrimp Tacos
I've made this again and again. The cilantro and lime are delicious with the shrimp. It tastes fresh and light, but it's filling. Perfect for summer, but we have them year-round. I always have leftover chipotle peppers in adobo sauce, so I put them in a small Mason jar in the refrigerator, and they last for months...maybe years...I've used them up before then.

Tangy Cucumber and Avocado Salad
I make this frequently, often served with Mexican food. It is a very light and refreshing salad, perfect for summer. Whenever I've shared it at a potluck, I've had requests for the recipe.
