Old Fashioned Creamy Rice Pudding

My husband is an avid rice pudding fan, so I have tried many recipes in an effort to find the best one. This is it! I have made it several times only altering the cook time a bit (longer after adding the egg). It is creamy and delicious and gets eaten up quickly in my house! FYI, if you are making rice for this (rather than using leftovers from last night's dinner) a cup of dry rice makes almost exactly enough for a double batch.

Italian Love Cake

Everyone at the party LOVED this cake and asked for the recipe. I did as other reviewers suggested and made the cake the day before then iced it an hour before the party and put it back in the fridge. I used powdered sugar in the ricotta filling and doubled the amount as others suggested it wasn't sweet enough. I had extra large eggs so I only used 3 in the filling. The filling sunk into the cake nicely and I baked it for 60 minutes in a metal pan. Perfect! I also used 16 oz of whipped topping since I didn't want to have extra in the fridge. I will make this MANY more times. YUMMY!!

Beth's Peach-Nectarine Muffins

These were so yummy. I ate 3 straight out of the oven! I only had nectarines, which were super sweet but rather small, so I used 4-5 of them and no peaches. I also followed the advice of other reviewers and used 1/2 cup white sugar and 1/4 cup brown sugar. I forgot to add the other spices that they suggested, but they were great as is! I might make another batch tomorrow. The recipe made 12 for me.

Caribbean Chicken

We really enjoyed this chicken. I used more nectarines than it called for and my mom said she could have eaten even more nectarines. Some complained of too much pepper, but I may not have mixed the spices adequately. I used 5 chicken breasts and split them before coating, which gave more flavor per bite of chicken. I doubled the spices and liquid mixture for this amount of chicken. We'll definitely make this again!

Zucchini Crisp

My father is the avid gardener in our family, and my husband's first request when the zucchini is ready is this recipe! I began making it last season and we will have it again for dessert tonight. We love it warm, and even eat it for breakfast sometimes.

Taco Soup II

I spiced this up for my husband (added jalepenos and jalepeno powder) and kept it more mild for me. We both loved it! I used a chipotle taco seasoning, which was very tasty. Also, I used only 1.3 pounds of ground turkey, and omitted the lima beans. There didn't seem to be much broth even after those omissions, so I think leaving out one can of the beans was a good choice. I'm making it again tonight. YUM!

Sausage, Hominy and Egg Brunch

My dad and I made this dish together over Thanksgiving break. It was a big hit for breakfast! We used bacon since we didn't have sausage and doubled the recipe so we could eat it again the next morning. Next time we would have used more bread crumbs to completely cover the top because that was a tasty addition. I'll make this one again!
