Mexican Tinga

Very good. Use one or two chipotles and a little adobo sauce. I used half of a whole boiled chicken I had left over. Definitely put refried beans on the tostadas. I accompanied this with a salad with a garlic, lemon & olive oil dressing.

Asian Salad

OH EM GEE is this good. Seriously, don't think about it, just make this salad. I only used one thing of Top Ramen package because I forgot to buy two and it turned out wonderfully. Plus it cut the fat down and that's a bonus.

Asian Lettuce Wraps

Awesome! I loved this recipe. Here's what I changed: I used iceberg lettuce, used tilapia instead of ground beef (baked in oven, then chopped up real small added to veggies in the end just to heat up), then sprinkled with a little crushed peanuts. Next time I want to add shredded carrots and some of those fried vermicelli thingies and perhaps make some fried rice on the side. UPDATE still making this recipe and love it. I always quadruple it b/c we eat it as a meal.

This is just great comfort food, but you just CAN'T have it without Fritos! Skip the lame ol' crackers and slap some fritos on this bad boy! Here's how i do it: Pasta, chili, cheese, diced white onion, then fritos....mmmmm.....!

Pork Roast With The World's Best Pork Loin Rub

incredible. i didn't change a thing and i loved it. plus when i used what i needed for my loin, i put the rest in the freezer and used it later on pork chops and then on a pork butt roast. i cannot say enough good things about this.

Authentic Louisiana Red Beans and Rice

I love this recipe and I everyone I make if for loves it! But I made a few minor changes. After soaking my beans, I cooked them in the crock pot for about 5 hours, then I added all the other ingredients UNCOOKED. I just threw them all in and let them cook on low for about 4-5 more hours.Turned out delicious over the white rice. I also used a cheddarwerst sausage. I just use whatever sausage is on sale or that I have on hand. Doesn't seem to matter. I also ALWAYS use Tony Chacheres Creole Seasoning.
