I replaced ham with zucchini, used frozen hash brown potatoes instead of fresh, and instead of 8 whole eggs I used 5 whole eggs, 3 yolks, some milk and a few spoonfuls of cottage cheese (I had yolks I needed to use up). The frittata was delicious and filling, perfect for a Sunday brunch!
