Wow, this was excellent, except I did not use tarragon. My fiance said it is now his favorite pasta. I never had tarragon before, so after buying it, I smelled it. Unexpected, it smelled like black liquorish, and surprise - it tasted like it, too. I hate black liquorish, so I threw in fresh thyme instead. I tripled the sauce, plus I added 1 1/2 chopped onions and 8 oz fresh sliced mushrooms. I added a big splash of white wine after taking the chicken out to saute the veggies in. I put in 2 cups of heavy cream (instead of 1 1/2) because I wasn't paying attention, but it was perfect! As far as the chicken (used 3 chicken breast halves), I rubbed it with a bit of dijon and marinaded for an hour. Then I sprinkled both sides with salt and pepper and coated with flour. I set it back in the fridge until I was ready to cook this. I served this over 8 oz of linguini. My fiance and I ate it all up!
