French Toast Casserole

This tasted great and was super easy. I doubled it to fill a 9x13 pan. For bread, I used half stale French bread, a few pieces of white bread, and leftover crusts from homemade bread. I cut the white sugar by half and mixed the cinnamon in when I whisked the eggs, rather than sprinkling it on top. I did sprinkle a little bit of brown sugar and cinnamon on top for looks. Enjoy!

Cheesy Scalloped Potatoes with Ham

This was a great recipe to start with, but next time I won't follow it as written. The onions took longer to cook than the potatoes, so I will put the onions in with the butter in the skillet before I make the white sauce next time. this also had too much black pepper for my taste, so I may cut that in half next time. I'd rather add more on my plate if need be.

Blackberry Pie I

This recipe was great. I used frozen berries that I froze from my garden and thawed. I used the sugar and flour the recipe called for. Per other reviewers suggestions, I brushed beaten egg on the bottom crust. I also brushed the top crust with beaten egg prior to sprinkling it with sugar. I did not use the full 1/4 cup of sugar on top. This recipe is easy and delicious.

Bobbie's Oatmeal Cookies

I only added raisins due to a nut allergy and not having any chocolate chips on hand. I also added 1/2 tsp cinnamon. With these small changes this recipe was wonderful. I will definitely make it again (maybe tomorrow!)

Beef and Irish Stout Stew

My husband and I both loved this stew! I modified it by adding cubed potatoes to the stew, rather than serving it over mashed potatoes. Since I was worried the potatoes would soak up too much of the liquid, I added a touch more beer. It was delicious! The base is almost like a gravy, and is perfect to dip crusty bread into. I will definitely be making this again soon!

Scott's Sweet Potato and Butternut Squash Mashers

Yummy! I baked the squash in the oven, rather than boiling it. I thought it may retain more vitamins this way. Otherwise, I followed the recipe exactly. It was delicious. Next time, I may add a little bit of butter, and make a breadcrumb topping for it and bake it. I'm thinking that it will be similar to the sweet potato bake that i love from boston market restaurant.

Chicken Wing Dip

I hate when people review a recipe when they have completely changed it. That being said, I am going to do just that. My husband woke me up this morning as he was leaving for work to inform me that he would be picking me up at 12:30 for a bbq, and that he said I'd bring a dip. I didn't feel like going to the store, so I adapted the recipe using what I had on hand. I used: 2 cups shredded canned chicken 8 ounces reduced fat cream cheese 4 ounces regular cream cheese 3/4 cup Franks hot sauce--buffalo style 1/2 cup shredded cheddar 1/3 cup blue cheese dressing 2 ounces crumbly blue cheese It was fantastic! Being from Buffalo, NY, I prefer blue cheese to ranch dressing. I found that using the crumbly blue cheese added more flavor, but without making the dip too runny. The point of this review is that this is an easy recipe that is adaptable to use what you have on hand. Have fun experimenting!

Awesome Baked Sea Scallops

I will not make this recipe again, as I thought it kind of bland. Also, the bread crumbs only got crispy on the very top, and were mushy where they were in contact with the scallops. I tried to cook it longer so they cooked more, and it was less runny, but then the scallops began to get rubbery.

Spinach and Tortellini Salad

Delicious, and I don't even like spinach! I omitted the black olives because my husband does not care for them. Also, fresh spinach is healthier than frozen, so I used that. It is best to make it a couple of hours ahead of time so the spinach soaks up some of the dressing!

Maggie's Clams Casino

I washed the clams, and placed them on a cookie sheet in the oven at 350 until they opened up. Then followed the recipe. Next time I will omit the red pepper, because the filling was not bread crumby enough for me.
