Rice Pudding

This makes a huge amount of rice pudding. Also, I did not have a 2 quart baking dish (?!) so put it in a 13x9 pan. It was pretty soupy but it tasted good. My grandpa enjoyed it.

Whiskey Cake I

This cake was OK. I didn't like it much, but a few of the older gentlemen at the party I served this at went nuts for it. It just tasted like plain white cake with a few nuts in it to me...It was certainly not dry, though!

Dill Vegetable Dip

I followed this recipe almost exactly. The only change ws I used green onions instead of a white or yellow onion. I find that they are much easier to mince than the others and have a fresh, mild taste. I was very happy with the results as I really didn't want to use dehydrated onions or a soup mix. Nice, unoffending seasonings - a crowd pleaser!

Libby's® Famous Pumpkin Pie

I don't know what recipe my family has been using all these years, but it was my duty to make the pumpkin pie this year. As I had no "family recipe" to follow, I used the one on the back of the pumpkin can (also the one found here!). I got such rave reviews - even from people who don't normally like pumpkin pie! - that I couldn't believe it! The pie was perfectly set (not dry or too soggy) and the spices were perfect! I will DEFINITELY be making this again. I served it with fresh whipped cream.

Astoria Crab Pasta

This recipe is incredibly light and bland. I would have given it 1 star, but because it will be so easy to jazz up in the future (like, 10x the garlic, 3x the spices and champagne!) I will give it 3. It is a good base recipe or if you have picky eaters who only like butter noodles, this is a good one to get them started on. I used shrimp and scallops instead of crab.

Beer Bread II

I omitted the chilies and cheese. I made 8 muffins and put the rest of the batter into a loaf. It only took about 30 minutes to bake this way. I used Trouble Brewing Amber Ale. I thought the butter was excessive, but I used it all anyways. I used a brush to slather it over the muffins and the loaf and I did it in 2 batches to allow optimal butter absorption. =] By doing it this way, I avoided a grease puddle under my bread. The muffins did not bake to look like a muffin, they just look like little rocks, but inside are soft. I would recommend using foil muffin wrappers if you choose to make muffins. I used paper and they got just a little stuck to the bottom of the bread!

Rosemary Roasted Pork Tenderloin

Wonderfully juicy tenderloin recipe! Not at all dry, and very flavorful! I didn't have dijon mustard (thought I did, got into the recipe and there was none to be had!) so I substituted 1/4 cup prepared yellow mustard with a heaping tablespoon of horseradish. It turned out great! This one is a keeper!

Risotto with Sun-Dried Tomatoes and Mozzarella

I had a hard time deciding if I liked this recipe when it was done. It SOUNDED great. But I encountered issues with the rice being undercooked (I have no idea how as it is a long cooking process) and the finished product is actually quite flavorless. I was thinking it would be a nice "caprese" style, savory dish with the tomatoes, basil and mozzarella. It ended up being a bit sweet, actually - not at all what I expected. It wasn't absolutely disgusting or anything, just rather bland and all around a bit of a dud. I added a lot of salt and it helped a little, but in the end none of my family really liked it (aside from the bit we picked at). This recipe also makes a HUGE amount of risotto!!! Plenty for 6+ people!

Shrimp Scampi

VERY good for how lean this is. No butter like a traditional scampi, but definitely no sacrifice on the flavor! I added 6 (medium-small) cloves of garlic instead of the 2 the recipe calls for. However, my sister and I love garlic, so we thought it was great with the extra flavor! I infused olive oil with the garlic, then added the shrimp and other seasonings before adding it to the pasta. Delicious!

Spiced Pumpkin Seeds

I didn't have any garlic salt for some reason (?!), so I used some garlic powder and a little extra salt. They turned out pretty well. They did not take as long in the oven as the recipe said, though, so keep an eye on them!

Heavenly White Cake

Wonderful for a basic cake recipe. I made cupcakes with the batter instead of a whole cake and they come out simply delightful. Not too sugary sweet, nice and fluffy but with some body.
