Smooth Sweet Tea

This is highly addictive!! I've made it twice this week and I'm trying to watch my caffeine intake... This is the perfect sweet iced tea! No need to buy it anymore!

Mom's Cucumber Salad

Great flavors!! Love the ease of preparation. My ONLY complaint is that mine is very watery. I made it yesterday evening and this morning it is pretty watery. I guess next time I'll try the salt trick I've read about. Otherwise, it would have been 5 stars for taste and ease!

Carrot Cake III

This is fantastic!! The only change I made was to use cake flour (because I had it). I didn't make the frosting either because we prefer to eat our cake without it, but otherwise the cake was made as written. I used my Kitchen Aid shredder attachment and shredded the carrots finely. Had no problems (mush as others have said). It is moist and delicious, if a little nutty. I may half the nuts next time, or chop them more finely. But we love this!! Will definitely made again.

Fabulous Wet Burritos

Really good! I didn't care for the brand of enchilada sauce we used... very strong... very spicy. That didn't have anything to do with the recipe itself. The recipe was yummy! I made it exactly as written and would only change the enchilada sauce. Otherwise, will definitely make again!

Chocolate Cornstarch Pudding

Definitely 5 stars for ease and taste! This is a great stand-by comfort food recipe. Will definitely make again. The only thing I did differently was to use heaping tablespoons of cocoa powder because I wanted it chocolate-y! This is my new keeper. =)

Homemade Vanilla Pudding

I would definitely give this 5 stars for ease and taste, but I gave it 4 because I didn't follow the directions exactly. I, like others, whisked all the dry ingredients together before adding the milk, and then turned on the heat. I've never been successful with cornstarch and hot liquid, so I knew I should mix it with the cold milk. Otherwise, great basic, simple, tasty, comfort-food. Will definitely make again and keep as my stand-by homemade vanilla pudding.

Herb Roasted Pork

OMG!! For time restraints and only needing to feed my husband, my 15 month old, and me, I made a 2.5lb roast... but I wish I had made a 5lb. It was fabulous!! We loved the glaze soooo much! I used the full amount of rub (using 2 garlic cloves, instead of 1) and doubled the glazing sauce (using half white sugar and half brown sugar), based on what others have said. I'm sure it would have been great as written, but we would have missed having the extra glaze! Definitely a keeper. Can't wait to make it again. =)

Oatmeal and Applesauce Pancakes

I have a one year old whom I try to fix healthy meals for. This one sounded wonderful. I did modify mine a little. I used 1 packet of maple and brown sugar instant oatmeal in place of the quick cooking oats (not so healthy I suppose), 1 1/2 tsp baking powder, 1/2 tsp baking soda, 1 tsp cinnamon (we LOVE cinnamon and would add more next time), and 2 tsps vanilla (LOVE this too). They were wonderful!! They smelled fantastic while they were on the griddle! I set my electric griddle at around 325 and they had to cook for quite a while so they weren't doughy. They were still moist from the applesauce, but perfectly so! LOVE, LOVE, LOVE THESE!! Will definitely make again and maybe try other instant oatmeal packets to change up the flavor. BTW, this made 11 for me, using 1/4 cup batter for each. My little one ate 2 whole pancakes!

Slow Cooker Spicy Black-Eyed Peas

This was absolutely delicious!! Just a little spicy, but perfectly so for us. I used frozen peas so I don't think I would have needed the 6 cups of water, but all I did was remove it from my crockpot and put it in a dutch oven to cook down the liquid. It was fantastic! Definitely will be making again!

Cheesy Zucchini Casserole

This is so yummy! After reading some of the other reviews I did make a view additions for our personal taste. I made half the recipe, which turned out great. I used the whole 4oz can of green chilies for half the recipe. I cut the zucchini into 1/2"x1/2" cubes. I added garlic and onion powder as well as fresh ground black pepper to my egg mixture. I used cheddar cheese and I shredded some Pepper Jack cheese in also. It turned out fabulously! Will definitely make again and would share with others. What a great way to use all that "extra" zucchini.
