Manicotti Alla Romana

My two picky eaters loved this! Since my family is small, I reduced the amounts used for the filling: I used a half-pound of ground beef; maybe about a cup's worth of fresh spinach (which I lightly boiled, then chopped before adding it to the beef); a cup of cottage cheese (we don't have ricotta); about a teaspoon of dried parsley; and then one beaten egg. As I was using what I already had in the house, I also substituted in 12 jumbo shells (parboiled, about 6 minutes) instead of the manicotti tubes, which will give us enough for two meals. I used the full amounts for the white sauce, though. Yes, it was a little salty, but that's because I'm not used to too much salt. My husband really liked the layering of the flavors between the white sauce and the jarred pasta sauce (I used one that had Italian sausage in it). Thanks for a great recipe!

Honey Mustard Grilled Chicken

Loved it! Took a double batch to a potluck tonight (adding a little extra honey so that it was 2/3 c Dijon mustard, 2/3 c honey, 4 Tbs mayo, and 2 tsp steak sauce). I told everyone that we were all going to be guinea pigs for this recipe. This chicken ended up being the hit of the party! Thanks for a great recipe.

Sour Cream Coffee Cake III

Pretty good-- moist, cinnamon-y goodness. I've tried it twice, once in a 9x13 pan, and the second time in a 9x9 pan. Definitely recommend using the 9x13. Also, I didn't think it was necessary to double cinnamon topping; I did that the first time, and I had some left over. Thanks for a great recipe.

Taco Seasoning I

Very good! I added in a couple dashes more each of cumin and garlic powder. Also, after adding the initial 2/3c water and mixing it and the seasoning in, I ended up adding an extra 1 cup of water and let it simmer (I had to get my preschooler down for nap). When I was ready, I boiled off the remaining water while stirring the mixture. Thanks for this recipe!

Sopapilla Cheesecake Pie

This is so yummy! I only used about half the butter mentioned in the recipe, and I cut in the butter with the sugar and cinnamon and spread it over the top crust. While this dessert was good the first day, I thought it was better the second day-- so delicious. Thanks for a great recipe!

Halloween Bloody Baked Rats

This is such a cute idea! I tried it for last Halloween, for a potluck at my work, where we had a contest for the best Halloween foods. I won with this recipe! I didn't use the peas for the eyes, and I used sliced almonds for the ears, which I added after the baking was finished. The uncooked spaghetti tails worked really well; they cooked enough to be limp, but didn't burn. And the recipe itself was delicious-- all the mice were completely gone before the potluck was over. Thank you for a wonderful recipe-- I'm using it again next year, for a party at my home.

3-Cheese Pasta Bake

Very good. I have made this twice now, and it was good both times (cheese soup was used both times). I had two kitchen helpers the second time, and they added in extra cheese and green peas (frozen green peas which were added after the baking was finished). It was still very good!

Seven Layer Tortilla Pie

Very good! I like that this is easily adaptable to what we have available in the pantry. For the middle tortillas, I used corn tortillas (we only had a couple flour tortillas left); also, for both the flour and corn tortillas, I was a little concerned that my husband would find them to be too soggy with all the other ingredients, so I first put them on a dry frying pan at medium heat until they were just a little crunchy and brown, and then assembled the pie. Homemade Black Bean Veggie Burgers

Very yummy! I made them for my DH's mom, and she loved them! We don't have a grill, but I baked them in the oven for 22 minutes at 375 degrees: 10 minutes on one side, then 12 on the other. I'll be making these for my own mom next! Thanks for a great recipe.

Sun-Dried Tomato Pesto

I made some modifications so I could just use the ingredients I had: no sun-dried tomatoes, but I added in an extra tbs of tomato paste and added a little bit of sugar to counter the tomato paste. Didn't have red wine to add, either. I added in a little extra garlic, too. This was extremely yummy-- thank you!

Awesome Sausage, Apple and Cranberry Stuffing
