Florida Seafood Casserole

This was good, but there wasn't a whole lot of flavor to it. I think next time I might add some scallops and maybe saute the seafood in some olive oil and seafood seasoning before adding to the rest of the mixture. I will definitely be making this again so I can tweak to our fit our taste.

Best Ever Chicken Casserole

This was pretty good! I did make some changes though, which is why I only gave it four stars. I cut my raw chicken into bite sized pieces and browned it in olive oil, white wine, lemon juice and lightly seasoned it. I also added a bit of cheddar cheese to the mixture before baking. I think next time I will add broccoli as well. Very good base recipe!

Chicken Piccata with Artichoke Hearts

This was really good! I cut the chicken into a little bit smaller pieces than the recipe called for. I also had trouble getting the sauce to thicken as much as I would like so I ended up adding about a tablespoon and a half of flour to it. I'm not too crazy about capers so next time I might reduce the amount or omit them altogether. Overall this was a really good recipe and I can't wait to make it again :)

Asian Roll Lettuce Wrap

These are delicious!! Instead of making the turkey into meat balls, I browned it with green onions, red pepper, green pepper, an onion and the soy sauce and seasonings. To serve, I tore a lettuce leaf into small pieces (it was much easier to eat this way), topped with rice, turkey mixture, shredded carrots and the sauce. I can't get enough of this! It's hard to believe something this easy to make and healthy can taste so wonderful!!

New Orleans Shrimp Toss

I made this for dinner last night and am so glad I did! This was one of the best recipes I have had in a long time! I did make a few substitutions though. I used olive oil instead of vegetable oil, regular cream of chicken soup instead of the one with herbs, omitted the chives and served over penne pasta instead of a biscuit or cornbread. I also cooked the sauce and shrimp for a lot longer than what the recipe called for on very, very low heat. Next time I think I will add scallops and serve over rice.

Tropical Shrimp Scampi

I made this for dinner tonight and was not the least bit impressed. Neither my boyfriend or I could finish even half our plates. I think it called for way too much orange and lemon zest. If I try this again I will only used 1 tsp of each and add lemon juice as well.

Vegetable Pizza I

This is sooo good! I have made this twice in a weeks' time and can't wait to make it again! I omitted the tomato and added red pepper because I don't care for tomatoes, but other than that followed the recipe exactly.

Great Garlic Bread

I had this for dinner tonight with lasagna and it was absolutely delicious! I did, however, make a few modifications. I used unsalted butter so instead of 1 1/2 tablespoons of garlic powder I used 1 tablespoon garlic powder and 1/2 tablespoon garlic salt. Instead of mozzarella, I used a six cheese blend. I will definitely make this again and again. Thanks for the recipe! Update-I made this again last night and instead of melting the butter and mixing in remaining ingredients, I softened the butter stirred in the garlic, parsley and half of the cheese and spread evenly over the bread. Baked for 10min then added the rest of the cheese and baked for an additional 5min. Try it this way. You will not be disappointed!

Alfredo Mostaccioli

I love alfredo sauce and have been looking for a recipe for a long time. I'm happy to say I have finally found a keeper. I was a litte skeptical at first because I expected the sauce to be a little bit thicker, but it was delicious! I sauteed half a pound of shrimp in olive oil, white wine, garlic and pepper and added to the sauce. It was a delicious meal that I will definitely be making again and again.
