Uncooked Banana Pudding

Huzzah! Doubled the recipe as well to fill my punch/trifle bowl! My two cents: use the mini wafers! They are similar in size to banana slices and keep it even looking for presentation. Also, I saved my 16 oz sour cream container to help portion perfectly even layers. With a double batch, fill your 16 oz sour cream container to the brim each time for 5 even layers.

Carrot-Sweet Potato Mash

Fantastic! Quick & easy! I doubled it and actually didn't have any fresh carrots, so I used a can of carrots (mashed them in with drained cooked sweet potatoes). While I'm sure fresh is better - still tasted great!

Champagne Cake I

Perfect! Used a sweet champagne and cut out a little white sugar - tastes amazing! Great for a special occasion like an engagment party or a just more sophisticated substitute to the ol' birthday cake. And since the bottle is already open, you might as well enjoy the rest, and really enjoy baking.

Chicken Cordon Bleu Bites

These were very good! Thought we had bread crumbs and Swiss, but found a very good substitute using cheddar and Jiffy cornbread mix. Really Yummy! I used more jiffy than the amt. of bread crumbs the recipe called for (I didn't measure, just added enough until I could make the ball shape, but they were still sticky b/c the jiffy is finer). They turned out great! Moist and fantastic, we put a couple served on salad to give them some kind of redeeming nutritional quality.
