Oatmeal and Wheat Flour Blueberry Pancakes

I liked this recipe even though I ended up changing some things. I used a whole pint of blueberries. I used skim milk with vinegar to approximate buttermilk. I added some cinnamon and vanilla for some additional flavor. And finally I left out the oil by accident, but did not miss it. I will definitely be making this again, and will try the soy milk if I have it on hand next time.

Lower Fat Banana Bread II

This recipe also turns out well using whole wheat flour and egg substitute. I did reduce the vanilla to 1 teaspoon based on other reviews and added a 1/2 teaspoon of cinnamon. Finally, my bananas were not very big so I put in three instead of two. This is yummy!

Banana Frittata

I really like this recipe for my over-ripe bananas. I generally substitute whole wheat flour, and sometimes egg beaters for the eggs. I agree it is best to mash the bananas first. And I add 1/2 t vanilla and 1/4 t cinnamon. I don't use the recommended amount of oil butter - I just use enough butter or cooking spray to coat my pan.
