Chocolate Zucchini Muffins

Great, versatile recipe. I found the original recipe a little too sweet and oily for my taste, but on second try I discovered you can half the sugar, reduce oil/add zucchini, add chocolate chips, and sub 1 c almond flour for all purpose if you like. The spices are a nice blend -- love the cardamom!

Huckleberry Muffins

Good base recipe, but WAY too sweet. Huckleberries have more complex flavor when they're not dulled by sugar. I'd cut the sugar in half and probably add a tsp. of lemon zest to this. But the muffin base is great!

Peach Berry Cobbler

Country Cinnamon Swirl Bread

This is a good basic recipe. I made it exactly as it called for, and it was tasty. However, I don't care for the dry cinnamon layers. I think next time I will add melted butter with the cinnamon sugar and see if that helps.

Honey Oat Beer Bread

Fantastic. I've made lots of different beer breads but this is by far the best. FWIW I used a lite beer ("lite" = not worth drinking) and got a nice honey oat flavor in this one. Thanks!

Chocolate Pumpkin Cake

Wow, this was GOOD! I made it last night for friends and it was a hit. Fortunately for cooks like me, the recipe is forgiving: I bought a 30 oz can of pumpkin instead of 15 oz. Long story short, I realized my mistake but the cake still ended up with about 22 oz of pumpkin. I think that made it tastier, though -- and I just baked it a little longer. It had a mild pumpkin flavor and was really moist. Other notes: I used Devil's Food cake mix and added 2 tsp. of pumpkin spice and served it with a Chocolate Cream Cheese frosting. So good!

Chocolate Cream Cheese Frosting

This tastes wonderful! I've made it a couple times now, and here are a couple things I've learned from my mistakes: (1) Don't add much milk to thin it -- just keep beating it with the mixer. (2) You can substitute orange liqueur instead of vanilla, and/or add pumpkin pie spice. (3) The pumpkin spice and orange liqueur mix added to frosting is really good over the Chocolate Pumpkin Cake recipe on this site. (4) It's hard to not lick your fingers with this recipe!

Baked Stuffed Zucchini

So good and so easy! We have (surprise, surprise) a bumper crop of zucchini and the husband says I can make this over and over again. I followed the recipe entirely this time, and it was fine (a little soupy, but good). Might try experimenting with bread crumbs. Thanks for the recipe!

Rosemary-Garlic Chicken and Veggies

So easy to make! I used veggies from our garden (added some summer squash because we have so much) and it was a wonderfully tasty dish. I think I'll add some salt/pepper to the chicken next time, but overall it was great.
