Tortilla Chicken Vegetable Soup
WE LOVED THIS!! However, we halved the recipe and it still made enough for 2 people to eat for a week. We added chili powder and added more cayenne pepper than it asked for and it still wasn't very spicy. Next time may try Hunt's Fire Roasted Tomatos. But we used Trader Joe's Fire roasted corn and it gave it so much more flavor. Also used 1/2 can Goya black beans,and substituted black pepper for white pepper. Topped with crushed tortilla chips and 4 Mexican cheese (shredded) Delicious!!

Chef John's Macaroni and Cheese
Substituted white pepper for black pepper and used extra panko/butter crumble for the top. Delicious! Made in a 9x13 pan. Definitely a keeper for comfort food on a cold night (however it is not waist conscious!)

Fiery Fish Tacos with Crunchy Corn Salsa
Used Chicken and marinated in chipotle marinade. The chipotle gave it a nice kick, and I omitted the cayenne called for in the recipe. Sauteed the chicken in a bit of EVOO for several minutes and used them. Combo of spicy chicken, sour cream and fresh salsa was AMAZING. Made a lot of salsa though, so either cut it in half next time or double chicken recipe. Also made a second night with tilapia fillets and used chipotle seasoning- GREAT!!
