Baked Chicken & Brussels Sprouts

This is a scrumptious and easy recipe. I used 2 Cornish Hens, split down the back and browned as per recipe. I also crumbled on some shredded prosciutto before covering and baking. I'd definitely make this for company!

Cucumber-Mango Salsa

This is a fabulous recipe with lots of possibilities. I served it with blue corn chips but as another reviewer stated, it would be wonderful with a grilled pork chop or chicken breast. I only had two mangoes and a serrano chile and it worked out fine. I think I might add a little diced pineapple next time to serve with pork.

Escarole Siciliano

This was absolutely fabulous! We decided to add a little slivered garlic and a few red pepper flakes to the oil just before the escarole for a bit more zing. Nice and healthy, too!

Crab Casserole

This recipe is fabulous with a little more oomph. I added a tsp. of Old Bay and a dash of paprika and hot sauce, and added about a cup or so of blanched asparagus. I also used some larger cocktail shrimp instead of canned because I had them at hand. I can't wait to make this for company!

Blueberry Bread I

A very easy and tasty way to use some of the wild blueberries that grow around our home! The loaves came out nicely shaped and came out of the pans in a snap when lined with greased parchment paper. I'll be freezing some for the winter!

GA Peach Pound Cake

This cake disappeared at a July 4th barbecue! I found it comes out of the pan easier if allowed to cool completely (an hour or so). Rave reviews from adults and kids alike! I served it with fresh, whole raspberries from my garden.
