Glazed Almond Bundt Cake

This cake is delicious. I followed other reviewers' advice and added more almond extract to the batter. I did 2 1/2 tsp. almond extract, 1 1/2 vanilla. I have made this twice, and the second time with more almond was much tastier. Also, the second time I used four mini-loaf pans instead of the bundt pan and baked them for 50 minutes. They turned out perfect. I poured the glaze over the top of all four loaves on plates and let them soak up the extra on the bottom. Delicious!

Crustless Cranberry Pie

So easy and delicious. Everyone asks for the recipe and everyone loves it. I make it without nuts and I only use one cup of cranberries, but cut them in half to spread the flavor around a bit. Other than that, no changes. Yummy!

Vegetarian Gravy

This recipe was very easy to execute and worked out really well. A lot of the guests at Thanksgiving liked it better than the meat gravy. I was happy to find an alternative that I could enjoy with the rest of the meal.

Best Black Beans

This recipe is so basic and so good. Beans have that "restaurant" quality flavor. I have used this same recipe with pinto beans as well and it turned out delicious. I generally make these at least once a week and use the beans in breakfast burritos with scrambled eggs, jack cheese, sour cream and salsa or put them in tacos for dinner. Delicious! My one piece of advice is to check your brand of beans for salt content before adding any. Some come already salted and can make the dish quite salty. Also, I always drain the beans but keep the water to add when/if they dry out while cooking.
