Burgundy Pork Tenderloin
Our family are not big pork fans but we love this recipe. However, because I suffer from migraines and I never have red wine in the house I took a chance and made it the first time with white moscato. I've made it at least 6 or 8 times since then with various whites and can't find one we don't love. I do add 2 packets of brown gravy and it makes the perfect consistency for gravy for the mashed potatoes. Other than that I don't measure anything, I just eyeball as I cook. I do strain out most of the onions just because that's my personal preference but I leave the celery, again personal preference. I don't change anything else. Anytime I have made this for guests they think I've slaved in the kitchen for hours. Shhhh, our little secret. Give it a try. Really, you won't be sorry. After all, all these glowing reviews can't be wrong.

Orange Sunshine Cake
My family all make this recipe but when finished we pop it in the freezer for a bit to let it get slightly chilled (not frozen but more than you would get from the fridge) and it makes it much better. It also makes it easier if you have to transport if you make a layer cake. You can't beat this cake! YUMMY!!

Ham and Noodle Casserole
My family really enjoyed this. I did make a few changes. First I used green onions; second, as a previous reviewer suggested I used cream of mushroom soup and increased it to two cans; and third I added an additional cup of swiss cheese. The flavor overall was very good but I did find it dry which may have been because I added the extra cheese. It wasn't creamy the way I was anticipating but again it didn't take away from the flavor. Next time I think I'll stir in a cup of milk and see if that helps but we will be having it again for sure. Great use for that extra ham. Thanks for the recipe.
