"Mary's Rum Cake"

I made this recipe again with the Betty Crocker Chocolate Fudge mix, and Jello Chocolate Fudge pudding. I also changed the alcohol to Kahlua, and left the measurements/proportions the same. It turned out pretty fantastic! I'll be trying another vesion of it with Godiva White Chocolate liquor and maybe throw in some raspberry flavor... will update when I do. :)

Baked French Fries II

These were great!! I made a trial batch with one potato to see how it would taste. I put garlic olive oil, salt, pepper, and dried basil in a mixing bowl. After mixing the spices, I threw in the potato strips and tossed to coat evenly. I used un-greased parchment paper and did not have trouble with the fries sticking to it like some other reviewers had said. I did have to bake for about 30 minutes as my strips were slightly thicker... and they turned out really good!! My total prep time was 5 minutes!! Definitely a keeper! Will make again on a larger scale next time.

Hot Feta, Artichoke and Roasted Red Pepper Dip

This was really, really creamy and absolutely scrumptious! However, it was a tad salty - the feta and the Parmesan both together was probably a little too much. Next time, I'll only do feta. I made two changes based on everyone's reviews: 1. I added garlic (One large clove) 2. Subbed the mayo for sour cream. (Not a fan of raw eggs in the mayo.) Will make again.....and again.....and again! :)

Avocado Feta Salsa

I made one change to it - My avocados were rather small, so I put two instead of 1. This is soooo awesome!! Such a lovely, refreshing twist to guacamole! The feta adds to the creaminess and also adds a little tang to it. This was the second time I made this - first for my family, and then last night for my friends. Both groups loved it, and it disappeared very quickly!

Betty Baker's Strawberry Salsa

This turned out really good, although it was a little bland for my taste. It wasn't sweet at all - I was expecting it to taste a lot sweeter and a lot like the creamy fruit dips. My friends loved it though - and they couldn't get enough!I will definitely make it again, but I might play with it next time, to see if I can add some more flavor to it!

Cheesy Artichoke Squares

This turned out sooooo good!!! I was really doubtful about how it would taste, especially because the garlic seemed like too much. But the crescent dough really evens it out - so not to worry if it smells too strong. I dropped clumps of the artichoke mixture and spread it with a fork. This is fantastic if you want to prepare the artichoke mixture the previous day, like I did, and then it takes less than 5 minutes to throw it together the next day, and then only 18 minutes in the oven. Perfect! The whole family LOVED it!

Sri Lankan Potato Curry

It was a little bland.... and I did end up using the entire can of coconut milk. The potatoes took forever to cook, but they did eventually (30 minutes of constant simmering later!). For the person who said they didn't have a grinder, what you can do is roast the seeds, and then place them in foil. Fold the foil up, then take a rolling pin and crush them through the foil. It works pretty much the same. That's what I did because my grinder cannot grind small amounts.

Cheese Puff Appetizers

They turned out really good. One slight modification: 1) I would increase the baking time to about 17 minutes. Some of my puffs were still doughy in the center, but that might have been because they were too thick. I tried making some with olives (kalamata olives - the good kind!) and some plain, just in case they didn't turn out too good, so I wouldn't have wasted the olives. But the ones with the olives turned out way better than the plain ones!! :) Definitely a keeper!

Ultra Easy Cream Cheese Dip

Next time, I would definitely use either a whisk or pulse it with an electric beater. Even though I spent almost an hour beating it with a fork (it was at room temperature), this came out very lumpy and even though I used Light cream cheese, it was very oily. It didn't turn out as good as I thought it would!

Artichoke Spinach Lasagna

You'd think that the marinated artichokes would make it too sour, but they didn't because you have to drain the marinade before using the artichokes. This recipe turned out GREAT, and my boyfriend who is not at all kitchen/cooking friendly made this lasagna ON HIS OWN because it was so easy! **He did put 4 smallish-medium cloves of garlic, though, instead of 4.5 because my pregnant sister is sensitive to garlic, and she was even able to take seconds!
