Grandma's Fresh Apple Cake

One of my most favorite recipes for a quick and delicious dessert. I chop my apples in a food processor and add lots of spices! This cake/bread is moist, flavorful and laden with apples. Delicious! Enjoy!

Pumpkin Crunch Parfaits

Made this for a holiday party. Doubled the recipe and layered it all into a big crystal bowl. Did add more spices than called for in the recipe. Delicious! Everyone really enjoyed this. It was gone in an instant.

Olive Pecan Spread

Chopped up the olives, pimentos and pecans in a mini food processor and added it to room temperature cream cheese and a scoop of light mayo. Ate this spread with baby carrot sticks--enjoyed the sweetness of the carrots with the saltiness of the dip.

Asparagus with Parmesan Crust

Unfortunately did not have shaved parmesan. Had to use grated. Tasted delicious--cannot wait to try it again with a little more balsamic then we used and the shaved cheese. Quick and easy recipe that I sped up by cooking the asparagus in the microwave first for about 3 minutes then popping it into the oven with the rest of the ingredients for about 5 minutes. Perfect!

Spicy Bean Salsa

The recipe that I have, which is similar to this one, calls for 1 Packet Good Seasons Italian Dressing Mix, 1/4 cup olive oil and 1/8 cup vinegar. It also calls for 2 tomatoes chopped rather than canned. It comes out delicious!

Chocolate Chip Banana Muffins

Goodness these were delicious muffins! I made them with all whole wheat flour and fat free vanilla yogurt. Mashed 3 bananas and they were perfect. A great recipe!

Spinach and Mushroom Quesadillas

I asked my son how many stars this recipe deserved and he said "five stars, Totally!". We made our quesadillas with whole wheat tortillas and added chicken seasoned with taco seasoning. We also filled ours with salsa before browning in the pan. A delicious warm lunch on a rainy day. Our family loves mexican food.

Cake Mix Cookies IV

I used Betty Crocker Triple Chocolate Fudge cake mix. This way the chips were already in the mix. I rolled some in sprinkles and others in sugar after scooping with my mini ice cream scoop. Baked them for about 10 minutes each (I guess they were a little big!). They were a bit crispy on the outside and fudgy on the inside. Can't wait to share these with my sons and neighbors for making it through week one of school! Thanks for the recipe. Simple, quick and very versatile.

To Die For Blueberry Muffins

Definitely a tasty blueberry muffin. I skipped the crumb topping to cut down on calories but I could imagine they would be delicious with it on. Our blueberries weren't sweet enough--had I known I would have increased the sugar just a touch. Added vanilla and lemon extracts to the batter. If I had had a lemon I would have added some peel as well. I love the flavor of lemon with blueberry. Thanks for the quick and easy recipe. Oh, and the blueberries were throughout the muffin rather than sinking to the bottom which I loved. Enjoy! Note: These tasted even better the next day. Enjoyed them even more!

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

Made these with vanilla cake mix and vanilla frosting. Brought them to a family party and all were eaten quickly. Made the cookie dough from the recipe but next time will definitely try with pre-made chocolate chip cookie dough. A fun idea that can be easily changed depending on the flavors of cake and frosting you prefer. I used my mini ice cream scoop so the balls of dough were uniform; definitely don't forget to freeze them before adding to the batter. Enjoy!

Crackle Top Molasses Cookies

It is an incredibly rainy day today--not sure if that is why I had to add so much extra flour. I did double the spices b/c I love my molasses cookies spicy! They are in the oven now and smell wonderful. Used oat flour instead of white and even added a little bit of cardamom. Delicious!

Masala Chai Brownies

I made these tasty brownies with Rice Dream Chocolate Chai and added a little bit of nutmeg, cinnamon and cardamom. The chai flavor was very subtle but the chocolate in these was plenty flavorful. They were moist and tender and mine did not crumble. I cut them after 20 minutes and they were fine. Ate one a little warm to try it out. Slightly fudgey in the center. Will definitely try again with chai tea steeped for 10 minutes or longer. Enjoy!

Mexican Shrimp Cocktail

We had mexican food for my son's birthday (his most favorite!) and I decided to make this for a crowd. I made about 1 3/4-2 lbs. of shrimp and I had a good amount left over. I added a bit more lime juice and used all V8 b/c my food store did not have clamato and I was pressed for time. I thought that the cilantro really made it tasty. I also liked the "kick" of the horseradish. A great little twist on an old time classic. Delish!

Oatmeal Whole Wheat Quick Bread

Very quick to make. Ground my oatmeal in the food processor then pulsed it after all of the ingredients were added until a ball formed. Placed in a greased loaf pan and baked 20 minutes. A dense loaf. Served it with a tomato based veggie soup. Delicious with butter.

Easy Pumpkin Muffins

Made these with a spice cake mix and 1/2 of a 29 oz. can of pumpkin while making pumpkin bread as well. I did add a little pumpkin pie spice b/c we like pumpkin with lots of flavor! My batter was dense making it super easy to scoop with an ice cream scoop but they did not turn out dry and dense after baking. I cooked mine for 22 minutes and they came out extremely moist. Though they tested done I had to take a second look b/c they were almost too moist when we were eating them. Sure enough they were cooked through. Yummy little muffins. Love the ease of the recipe! Enjoy!

Cranberry Wheat Bread

Made this loaf tonight for tomorrow's breakfast. Easy to throw together in the bread machine. Added some chopped almonds and doubled the spices. Didn't have cloves so I added cake spice instead along with the cinnamon and nutmeg. Baked up nice and high. Oh, I also added some flax seed meal and hi maize flour to make it a bit healthier.

Ginger Glazed Mahi Mahi

Marinated the fish for a slight bit longer than 20 minutes. Baked it in the oven and it turned out great. Be sure not to over cook it. I think 10 minutes would have been plenty. Sweet and salty...Yum! Served it with cold sesame noodles.

Mom's Zucchini Bread

Easy and delicious. I love a lot of spice and with 3 teaspoons of cinnamon you definitely can taste it! I ground the pecans and also added a few tablespoons of flax meal to my dry ingredients. I do find a slight after taste from either the baking soda or powder. Still, all and all, a yummy zucchini bread.

Date Nut Bread

We loved this delicious bread! It was a little sweet for my liking so next time I will add a bit less sugar. I added King Arthur cinnamon bits a long with cake spice, nutmeg and cinnamon. I also used Smart Balance and Egg Beaters to cut a bit on fat grams. OH! I also added chopped papitas instead of nuts for the added crunch. A simple and tasty recipe.
