Soft Raisin Cookies

I made a batch of these cookies b/c I needed something extremely quick to bring to a last minute pool party. My husband and son like a chewy cookie so they enjoyed this very much--I did have to add some yogurt to make it a bit more moist for mixing. I also added chocolate chips instead of the raisins. My oldest son said they tasted like coconut. An easy low/no fat recipe (if you leave out the chips!)

Strawberry Rhubarb Coffee Cake

Made a half portion of the recipe in an 8x8 pan and cooked it for 40 minutes. Cooked up high and filled the pan completely. Instead of rhubarb I substituted blueberries and cooked them with the strawberries for 2 minutes. Pulsed the butter, sugar, flour and cinnamon with 1/4 cup mixed nuts in a mini food processor to make the topping. Brought it to a reunion where people said that it would be perfect with a cup of coffee. My husband felt that it needed a bit more sugar which I attempted to cut back on in all three steps of the recipe. Next time I'll try it just the way it was written. A tasty treat that can be made lower fat with egg beaters and skim milk. Thanks for sharing!

Cottage Cheese Fluff

I haven't had this dessert in years--My grandmother made it as a special treat. She used apricot jello which has become difficult to find. Also, it works fine without pureeing the cottage cheese.

Applesauce Bars

These squares definitely are cake and not bars--I didn't have pumpkin pie spice--Used cake spice instead and they turned out well--I like my spice cake spicier so should I make these again I would definitely use some extra spices. I did make these in a 9x9 pan and baked for 20 minutes. They were moist and tender. Also utilized egg beaters in place of the egg. Would like to try with whole wheat flour and home made apple sauce. Extremely easy recipe--whipped them up quickly after dinner for a little treat.

Spinach and Mushroom Quesadillas

I asked my son how many stars this recipe deserved and he said "five stars, Totally!". We made our quesadillas with whole wheat tortillas and added chicken seasoned with taco seasoning. We also filled ours with salsa before browning in the pan. A delicious warm lunch on a rainy day. Our family loves mexican food.

Banana Nut and Ginger Bread

My family did not like this though I followed the recipe to a "T" with the exception of reducing the amount of cardamom. Very overpowering flavor of spices and hardly any flavor from the bananas. Very unusual taste.

Spicy Bean Salsa

The recipe that I have, which is similar to this one, calls for 1 Packet Good Seasons Italian Dressing Mix, 1/4 cup olive oil and 1/8 cup vinegar. It also calls for 2 tomatoes chopped rather than canned. It comes out delicious!

Jalapeno Popper Spread

Tasty and creamy when warm but gets a bit "gloppy" when it starts to cool down (Still tasted good though). Did do as others suggested and added Japanese bread crumbs to the top to add a nice crunch when you scoop. Added chopped "hots" from the jar rather than cutting up jalapenos. Ate this dip with tortilla chips.

Olive Pecan Spread

Chopped up the olives, pimentos and pecans in a mini food processor and added it to room temperature cream cheese and a scoop of light mayo. Ate this spread with baby carrot sticks--enjoyed the sweetness of the carrots with the saltiness of the dip.

Asparagus with Parmesan Crust

Unfortunately did not have shaved parmesan. Had to use grated. Tasted delicious--cannot wait to try it again with a little more balsamic then we used and the shaved cheese. Quick and easy recipe that I sped up by cooking the asparagus in the microwave first for about 3 minutes then popping it into the oven with the rest of the ingredients for about 5 minutes. Perfect!

Spinach Brownies

Delicious--cooked the chopped spinach according to the microwave instructions and removed as much water as possible. Used cheddar cheese b/c that's all I had on hand--I always use egg beaters, smart balance and skim milk to reduce the fat/calories some. Loved this quick recipe. Be sure to spray your pan well.

Cake Balls

Made these with vanilla cake and frosting and candy coating. VERY sweet and not to my liking though kids like them. Too, for Easter they asked for blue which was in no way appealing. Very hard to dip. Mine just did not look nearly as nice as the posted photos. Wish they did b/c I was going to bring them to an Easter dinner. Would be willing to attempt again with chocolate cake and frosting. Made them look ever so slightly cuter by melting semi sweet chocolate chips and spooning into a zip-loc bag. Decorated the tops with the help of my son.

No Bake Chocolate Oat Bars

Delicious! The only complaint I have is that the oat crumbs are very crumbly. I think about 1/2 cup of oatmeal fell off while cutting and plating the bars. Definitely a sweet treat. Cut the bars small. They go quickly!

Best Easy Chicken Croquettes

My son loves the Croquettes that they serve at his preschool. I thought I'd surprise him and make them at home. The recipe was easy--made easier with precooked chicken, which I didn't have. I did add 2 or more times the spices to these otherwise they seemed bland. We liked them though we didn't love them. Definitely worth trying but not sure that I'd make them again.

Zucchini Herb Casserole

My husband and I loved this "casserole" though our kids weren't too fond of it. It was easy and delicious. Added a lot more spices because when "taste tested" it seemed VERY bland. Would absolutely make this again. We served it as a side dish along side chicken and salad.

Shrimp Scampi Bake

Tasty but not fabulous--though I'm sure this was my fault. I attempted to cut back on fat/calories by using part butter/part smart balance a/part olive oil. Though my family liked it a lot it needed a little something else. Will definitely try again but will add more lemon/zest and spices.

Mexican Bean Salad

Tasty. Liked the use of three beans. Have a similar recipes that I like a bit more. The dressing ingredients are: 1/4 cup olive oil, 1/8 cup vinegar and 1 (dry) pkg. good seasons Italian salad dressing. Add 2 avocados chopped.

Little Smokies

These sweet and sour appetizers were a hit at my bbq with friends. Used only one bag of smokies and cut the sauce ingredients in 1/2 just to try the recipe. Should have doubled it instead. My picky five year old said "I loved them!". Perfect in my mini crockpot.

Zucchini Cornbread Casserole

Good, simple recipe. Nice way to use up too much zucchini. I have a very similar recipe that utilizes corn with the corn muffin mix. Mixed all of the cheese in with the other ingredients and baked in a 9x13 greased pan. Worked out well to slice squares and serve at a bbq with friends.
