Chocolate Chip Banana Muffins

Goodness these were delicious muffins! I made them with all whole wheat flour and fat free vanilla yogurt. Mashed 3 bananas and they were perfect. A great recipe!

White Chocolate Gorp

Love this recipe. Used white chocolate chips from Hershey and it turned out great. Definitely sweet but addictive. I love that you can add anything you have on hand. I mixed in some honey nut Cheerios and left out the Chex this time. Have used a can of mixed nuts as well as honey roasted peanuts. The saltiness of the pretzels with the sweetness of the coating is my favorite.

Spiced Pumpkin Seeds

Tasty and quick snack. My son loved these; He always asks for the seeds when we carve our jack-o-lanterns. These came out much better than expected. The little bit of margarine had the spices and salt clinging on rather than falling off in the bottom of the bowl they're served in. Be sure to spread them out on the cookie sheet and stir every now and again. Mine took slightly longer than an hour. Enjoy!

Chewy Peanut Butter Brownies

Chewy not cake-like which we really liked. Mixed all ingredients by hand rather than using my mixer. I think this helped with the chewyness factor. Used whole wheat flour, natural almond butter and egg beaters. Baked for 30 minutes in an 8x8 pan. Family loved them. Did add 3/4 cup of semi-sweet chocolate chips.

Oatmeal Whole Wheat Quick Bread

Very quick to make. Ground my oatmeal in the food processor then pulsed it after all of the ingredients were added until a ball formed. Placed in a greased loaf pan and baked 20 minutes. A dense loaf. Served it with a tomato based veggie soup. Delicious with butter.

Oven Fresh Seasoned Potato Wedges

Quick and easy side dish. Tasty and delicious. Cooked mine for 30 minutes and they came out perfectly. We really enjoyed these with steak and baked beans.

Cake Mix Cookies IV

I used Betty Crocker Triple Chocolate Fudge cake mix. This way the chips were already in the mix. I rolled some in sprinkles and others in sugar after scooping with my mini ice cream scoop. Baked them for about 10 minutes each (I guess they were a little big!). They were a bit crispy on the outside and fudgy on the inside. Can't wait to share these with my sons and neighbors for making it through week one of school! Thanks for the recipe. Simple, quick and very versatile.

Mexican Shrimp Cocktail

We had mexican food for my son's birthday (his most favorite!) and I decided to make this for a crowd. I made about 1 3/4-2 lbs. of shrimp and I had a good amount left over. I added a bit more lime juice and used all V8 b/c my food store did not have clamato and I was pressed for time. I thought that the cilantro really made it tasty. I also liked the "kick" of the horseradish. A great little twist on an old time classic. Delish!

Drunken Spinach Biscuits

Used all whole wheat flour. My biscuits did not rise. Not sure if I over kneaded them. I liked the spinach flavor but they were like bricks. Would be curious to try them again and see if they rise up as high as the picture shows.

Masala Chai Brownies

I made these tasty brownies with Rice Dream Chocolate Chai and added a little bit of nutmeg, cinnamon and cardamom. The chai flavor was very subtle but the chocolate in these was plenty flavorful. They were moist and tender and mine did not crumble. I cut them after 20 minutes and they were fine. Ate one a little warm to try it out. Slightly fudgey in the center. Will definitely try again with chai tea steeped for 10 minutes or longer. Enjoy!

Crackle Top Molasses Cookies

It is an incredibly rainy day today--not sure if that is why I had to add so much extra flour. I did double the spices b/c I love my molasses cookies spicy! They are in the oven now and smell wonderful. Used oat flour instead of white and even added a little bit of cardamom. Delicious!

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

Made these with vanilla cake mix and vanilla frosting. Brought them to a family party and all were eaten quickly. Made the cookie dough from the recipe but next time will definitely try with pre-made chocolate chip cookie dough. A fun idea that can be easily changed depending on the flavors of cake and frosting you prefer. I used my mini ice cream scoop so the balls of dough were uniform; definitely don't forget to freeze them before adding to the batter. Enjoy!

To Die For Blueberry Muffins

Definitely a tasty blueberry muffin. I skipped the crumb topping to cut down on calories but I could imagine they would be delicious with it on. Our blueberries weren't sweet enough--had I known I would have increased the sugar just a touch. Added vanilla and lemon extracts to the batter. If I had had a lemon I would have added some peel as well. I love the flavor of lemon with blueberry. Thanks for the quick and easy recipe. Oh, and the blueberries were throughout the muffin rather than sinking to the bottom which I loved. Enjoy! Note: These tasted even better the next day. Enjoyed them even more!

MMMMM... Brownies

Chocolatey and tender. Delicious and simple. What a great recipe! They baked up higher than I thought they would. Had a bit less chips so added some cocoa and 2 TBS. more sugar. Baked for 25 minutes. A great recipe!

Grilled Mahi Mahi

Delicious, just don't over cook it like I did. 35 minutes was much too long on our grill. The sauce was tasty; a bit spicy b/c of the chile peppers. A nice addition to the recipe box. We really enjoyed this main dish.

Zucchini Cornbread Casserole

Good, simple recipe. Nice way to use up too much zucchini. I have a very similar recipe that utilizes corn with the corn muffin mix. Mixed all of the cheese in with the other ingredients and baked in a 9x13 greased pan. Worked out well to slice squares and serve at a bbq with friends.

Little Smokies

These sweet and sour appetizers were a hit at my bbq with friends. Used only one bag of smokies and cut the sauce ingredients in 1/2 just to try the recipe. Should have doubled it instead. My picky five year old said "I loved them!". Perfect in my mini crockpot.
